CARROT RICE

This recipe goes to Srivalli's Rice mela event.



INGREDIENTS:
Rice- 1 cup
Carrot-100 gms
Green Chillies-3
Mint Leaves(Pudina),Coriander and curry leaves.
Salt to taste
Fennel Seeds-1 tsp
Sliced Onion-1(Medium)
Cashew nuts-5
Ginger garlic paste- 1 tsp
Chilli powder - 1 tsp
Garam Masala Powder - 1 tsp
Lemon juice - 3 tps
METHOD OF PREPARATION :
1) Finely grate carrot and grind it with fennel seeds.
2) Soak rice with 2 cups of water for 20 minutes.
3) Heat ghee in a pressure cooker.Once hot add sliced onion,fry till tender.
4) Add ginger garlic paste,split chillies and all the powders.Fry till the raw smell leaves.
5) Then add grinded carrot with little water,salt and lemon juice.Wait till carrot mixture raw smell leaves.
6) Finally add rice with water and mix them well.Cook for 2 whistles and keep aside.Allow it to cool.
7)Meanwhile,heat a spoon of ghee in a pan.Add cashews and mint,curry and coriander leaves.
Garnish rice with them .
Serve hot with raitha or any vegetable curry.

Love carrot based dishes... Have to try this as I have lots of carrots lying in my fridge to be used.

I Make this rice very often and I dont use the carrot after taking the juice out of it. This is new. will try it next time.

Nice entry, Shama! I make mint rice, pulav etc adding a little carrot but never tried so much!

Carrot rice is very interesting....remember my Mom...she sneaks in, carrots in my Dahi chaawal all the time.
