GHEE RICE


INGRDIENTS :


Rice- 1 cup
Green peas-1/4 cup
Grated Carrot-1/4 cup
Green Chillies-3
Mint Leaves(Pudina),Coriander and curry leaves.
Salt to taste
Chopped Onion-1(Medium)
Cashew nuts-5
Ginger-1 small piece
Potato-2 medium,finely chopped
Cloves-3
Cinnamon sticks-3
Bay leaves-2


METHOD OF PREPARATION:


1) Heat a 6 tbsps of ghee in a kadai.Add onion,Fry then till onion becomes transparent.
2) Add cloves,bayleaves,cinnamon sticks,green chillies,Pudina,curry ,coriander leaves and finely chopped ginger.
3) Then add green peas ,potatoes and carrot.Fry them for a minute.
4) Add rice to the mixture and mix well.Then add 1 1/2 cup of water.Add salt to taste.Pressure cook for 3 whistles.Turn off the flame.Serve hot with raitha or any spicy vegetable kurma.

MIXED DAL


INGREDIENTS :

Toor dal - 1/4 cup
Channa dal - 1/4 cup
Moong dal - 1/4 cup
Onion - 1 cup
Red chillies - 3
Curry leaves and coriander leaves
Mustard , Jeera - 1 tsp
Asafoetida - 1 pinch
Ginger-garlic paste - 1 tsp
Tomato - 2 big
Garam masala powder - 1 tsp
Salt to taste

METHOD OF PREPARATION :

1) Soak channa dal for 20 minutes . Then pressure cook all the dals with 2 spoons of oil and turmeric powder .

2) Heat oil in a kadai .Add mustard and jeera , when it splutters add chopped onion and saute till transparent .

3) Add chopped tomato and saute till skinny .Add red chillies and curry leaves . Add ginger garlic paste .

4) Then add dal with little water and salt .

5) Add garam masala and allow it boil for 10 minutes.Garnish with coriander leaves.

Serve hot with rice or rotis.

MUTTON KULAMBU




INGREDIENTS:

Mutton - 1/2 kg
Sambar Onion - 1 cup
Tomato - 1 (medium)
Ginger - 1 small piece
Garlic Cloves - 6
Grinded coconut - 1/2 cup
Mutton masala - 3 tbsps
Salt to taste
Curry leaves
Coriander leaves
Turmeric powder - 1 tsp

METHOD OF PREPARATION :

1) Heat oil in a pressure pan.Once hot,add chopped onion.Fry them till tender.
2)Add chopped tomato.Fry them till it gets mixed with onion.
3)Add curry leaves and chopped mutton.Fry them till mutton leaves
some water.
4)Add grinded ginger-garlic cloves and fry till the raw smell leaves.
5)Add grinded coconut and mutton masala,salt and turmeric powder and mix them well.Add sufficient water and pressure cook for 6-7 whistles till mutton becomes tender.
6)Switch off the flame,after the steam leaves.Again leave the pan without lid in a medium flame and boil them till oil separates.Garnish with coriander leaves before removing from the flame.
Serve hot with Idlis,rice or rotis.

SET DOSAI







FOR BATTER :

Boiled rice - 2 1/2 cup
Raw rice - 1 1/2 cup
Urat dal - 1 cup
Salt to taste

For Garnishing :

Grated carrot , sliced onion and coriander leaves .

METHOD OF PREPARATION :

Make batter and leave overnight . Prepare dosa the next day . Heat dosa tawa , make dosa like oothappam and flip to other side . Garnish one side and remove from flame dont flip after garnishing . After making three dosa's , arrange one above the other .

Serve hot with sambar or chutney .

RADISH CHAPATHI / ROTI


Back to hyderabad.........missed ur lovely recipes..........

Here comes my special favourite recipe,


INGREDIENTS :

Wheat flour - 2 cups
Jeera - 1 tsp
Radish - 4
Green chillies - 6
Turmeric powder - 1/2 tsp
Salt to taste

METHOD OF PREPARATION :

1) Boil radish and fry them in oil for a minute.Then add green chillies and saute them for a minute.
2) Mash them in a blender . Then add them to wheat flour add little salt and jeera . Knead them to make soft dough . add 2 spoons of gingelly oil and roll them finally .
3) Make small balls and then roll them to make chapathis.

Serve hot with kurma .

BOTTLE GOURD PAYASAM



INGREDIENTS:

Bottlegourd- 1 cup,grated
Sugar- 1/2 cup
Milk- 1 cup
Cashew powder - 1 tsp
Elachi powder - 1 tsp

METHOD OF PREPARATION:

1) Peel the skin of bottlegourd and chop/grate them.
2) Boil milk and meanwhile cook bottlegourd with sufficient water .Once done , strain the water.
3) After bottlegourd is cooked,add it to the milk with sugar and mix well.
4) After sugar gets melted,add cashew powder,elachi powder.Mix them well.Remove from flame when it becomes thick .

VERMILCILLI POTATO CUTLET



INGREDIENTS :

Potato - 4 (big )
Ginger garlic paste - 2 tsp
Vermicilli - 1/2 cup
Maida -as per requirement
Salt to taste
Green / Red chillies - 4

METHOD OF PREPARATION :

1) Pressure cook potatoes , mash them and keep aside .
2) Boil vermicilli with little water , drain the stock and allow it to cool .
3) Blend chillies , ginger garlic paste , salt and vermicilli .
4 ) Mix them with mashed potato and add maida little by little. Stop using maida when u the dough is not sticky . Knead them and make small balls . Flatten them to ur shape and tawa dry them . You can either deep fry them . Serve hot with sauce .
