FRUIT LUNCH / SALAD



A simple and yummy fruit salad . Mix fruits of your choice . My daughter loves it and we normally take this lunch during fasting . Linking it up with Fruit of the month - Grapes in my blog.

SWEET AVAL PUDDING FOR TODDLERS

INGREDIENTS :

Aval - 1/2 cup

Boiled warm milk - 1/2 cup

Sugar to taste

Ghee roasted Raisins - few


METHOD OF PREPARATION : 


1) Soak aval/poha in mlik with sugar till it gets softened . 

2) Add ghee roasted raisins . Pudding is ready to serve .

ORANGE HONEY PANCAKE

INGREDIENTS : 


Plain flour - 1 cup

Eggs - 2

Sugar - 1 cup

Oranges - 6 

Buttermilk butter - 2 tbsps

Baking powder - 1/2 tsp

Honey

METHOD OF PREPARATION : 


1) Whip eggs well with sugar .

2) Juice oranges in juicer removing seeds and skin.

3) Mix the other ingredients except honey with eggs.

4) Add orange juice to it and make batter without lumps.

5) Heat tawa and make pancakes like dosa .

6) Flip to its sides .


Serve it with honey . Spread honey over the pancake .Linking it up with Roshini's  Healthy food for kids event , initiated by Nithu bala.

MIXED VEGGIE VERMICILLI UPMA





INGREDIENTS : 


Mixed veggies - 1 cup

Channa dal - 2 tsp

Ginger - 1 small piece

Capsicum - 1/2 chopped

Mustard - 1tsp

Red Chillies -3

Vermicilli - 200 gms

Coriander leaves


METHOD OF PREPARATION :


1) Roast vermicilli in a spoon of oil till it gets roasted not burnt.Once done , keep it aside .

2) Heat oil in a kadai .Once hot , add mustard and channa dal . Saute till dal is roasted well .

3)Add chillies ,ginger and capsicum and saute well till tender .

4 )Followed by veggies . Sprinkle little water and cover with a lid .Cook till tender.

5)Add sufficient water and salt .Allow it to boil well . 

6) Finally add vermicilli and mix it up .  Cover with a lid and cook in slow flame till done.
Garnish it with coriander leaves.

FRUIT OPEN SANDWICH

A very simple yummy sandwich for kids . My daughter's favourite sandwich with her loved fruits .


 



METHOD OF PREPARATION : 


1) Toast bread with butter .2) Spread mixed fruit jam to it.3) Sandwich it with mixed fruits of your choice.
Fruit sandwich is ready .

BREAD UPMA



INGREDIENTS : 


Whole grain bread - 6
Red Onion - 1
Tomato - 2
Green Chillies - 3
Channa dal - 1 tsp
Mustard and Jeera - 1 tsp each
Chilli powder - 1 tsp
Turmeric powder - 1 tsp
Garam masala - 1 tsp
Curry and Coriander leaves
Salt to taste


METHOD OF PREPARATION :


1) Cut bread to small cubes .
2) Sprinkle little water to it and add chilli powder , turmeric powder and salt to it . Mix it well in a bowl.
3) Leave aside for 5 minutes.
4)Then , fry them in a hot kadai with a spoon of oil . Make sure , it doen't turns roasted/brown.
5) Once done , leave it aside .
6) Meanwhile , heat oil in a pan . Once hot , add mustard , jeera , split chillies , curry leaves and channa dal . Saute till channa dal is roasted well.
7) Then , add finely chopped onion and saute till tender .
8) Add tomatoes and mix it well with all the powders and salt. Tomatoes must be cooked well .
9) Once done , simmer to slow flame . Add the fried bread pieces to it and mix it well . Leave in flame for 5 minutes , continuously mixing it up . Only then , bread will take up the masala flavour .
Once done ,  garnish it with Coriander leaves .

SALAD SANDWICH



INGREDIENTS : 


Whole Wheat Bread 
For Salad : 
Mix sliced cabbage , tomato , onion and 2 tbsps of lemon juice .


METHOD  OF PREPARATION : 


Toast bread . Apply cheese spread to one side of each bread .
Sandwich salad between the bread .
Quick comfort breakfast to go with .

RAVA IDLI


INGREDIENTS :


Roasted Rava - 1 cup

Curd - 1 cup

Rice flour - 2 tbsps

Salt


METHOD OF PREPARATION :

Mix all the above ingredients and leave for 1 hour aside . Then , steam cook idlis .Serve with Sambar/Chutney .
