ARAITHA TAKKALI KULAMBU AND URULAIKILANGU-PATTANI PORIYAL/ TOMATO CURRY AND PEAS-POTATO MASALA

TAKKALI KULAMBU :






INGREDIENTS :

Onion - 1
Garlic - 5 cloves
Tamarind - a small lemon size
Turmeric powder - 1/4 tsp
Salt to taste
Sambar powder - 2 tsp
Mustard and Cumin seeds - 1/2 tsp (each)

FOR MASALA :

Tomato - 4
Cinnamon - 1
Cloves - 2
Coriander leaves ( one handful)
Green Chillies - 3
Kusa kusa(poppy seeds) - 1 tsp
Cumin seeds - 1/2 tsp
Fennel Seeds - 1/2 tsp
Coconut grated - 3 tsp

METHOD OF PREPARATION :

1) Heat oil in a kadai.Add Mustard and Cumin seeds.When it splutters,add chopped onion and curry leaves.Saute till tender.

2) Add grinded masala and little water.Add thick tamarind extract.

3) Add salt and sambar powder and allow it to boil in a medium flame,till the oil separates.

Serve hot with rice.



PEAS-POTATO MASALA :






INGREDIENTS :

Potatoes - 3
Green peas - 1 1/2 cup
Onion - 1 (medium)
Mustard seeds - 1/2 tsp
Cumin seeds - 1 tsp


FOR MASALA :


Green chillies - 2
Cumin seeds - 1/2 tsp
Fennel Seeds - 1/2 tsp
Coriander Powder - 1/2 tsp
Coconut - 3 pieces
Cloves - 1
Cinnamon - 2
Cashews - 6-9
Turmeric powder - 1/2 tsp
Salt to taste
Red chilli powder - 1 tsp

METHOD OF PREPARATION:

1) Pressure cook potatoes and peas for 3 whistles.Leave them aside till the steam leaves.

2) Heat oil and add the mustard,cumin seeds and curry leaves.When the seeds begin to splutter, add chopped onion and saute till tender.

3) Add the boiled vegetables and mix them well with onion.

4) Add grinded masala with little of water and mix them well; bring to a boil and simmer, for 10-15 minutes.

5) Remove from the flame when all the water gets evaporated and form thick masala with peas and potatoes.Serve hot with rice as side dish.

HOMEMADE MUTTON MASALA POWDER

INGREDIENTS :

Red Chillies - 25 gms
Coriander seeds - 15 gms
Cumin seeds - 10 gms
Black Pepper- 10 gms
Biriyani Leaf- 3
Cloves - 10 gms
Dried and fried Garlic cloves - 10 nos
Cinnamon sticks - few
Staranise - few
Dried Mint - 5 tsps
Kasthuri Methi - few 
Mustard - 1 tsp
Fennel seeds - 5 gms
Kuskus - 1 tsp
Salt

METHOD OF PREPARATION :

1) Dry fry them one by one and grind them to a fine powder with sufficient salt.
2) Store them in an air tight container.
