MUTTAI KURMA / EGG CURRY - 1


INGREDIENTS:

Egg - 5
Onion(big)-2

Tomato-1

Cumin Seeds-1/2 tsp

Mustard seeds-1/2 tsp

Curry and coriander leaves

Sambar powder-2 tbsps
Garam masala powder - 1/2 tsp

Turmeric powder-1/2 tsp
Coconut (grinded paste) - 1/4 cup

Salt to taste

METHOD OF PREPARATION:

1)Heat oil in a kadai.Add mustard seeds,cumin seeds,curry leaves.When it splutters

add finely chopped remaining onion.Fry till onion is part-cooked.


2)Then,add chopped tomato and fry them till tomato mixes well with onion.


3) Then add sambar powder,garam masala and salt.


4)Add grinded coconut mixture to it.Leave to boil.


5) Then break the shell and drop egg directly into the kurma.Wait for 2 minutes,once egg gets boiled it floats up.Add other eggs in the same way one after another.If u stir before egg gets boiled,egg gets mixed up with kurma spoiling their texture.Cover with a lid.Leave in slow flame until oil separates out.Add coriander leaves before taking from the flame.Serve hot with Rotis or pooris.

NELLIKAI CHUTNEY/AMLA CHUTNEY


I am sending this recipe to Vani's AFAM (A Fruit A month) event. Here is the recipe.

INGREDIENTS:

Nellikkai -100 g
Green chillies - 1 no
Ginger - a small piece
Garlic - 3 cloves
Salt to taste
Jaggery a pinch(optoinal)

METHOD OF PREPARATION :

1) Remove seeds of nellikkai.
2)Grind with a green chilli, a little ginger, garlic, salt and jaggery .
3) Season with mustard seed, jeeragam and oil.

CHILLI BREAD

This also goes to Bread Mania Event.




INGREDIENTS:


Bread - 3 slices
Onion- 1(big)
Tomato-3 (medium)
Chilli powder-1 tsp
Salt to taste
Curry masala powder/Mutton masala- 1 tsp
Dania leaves
Cumin seeds-1/2 tsp


METHOD OF PREPARATION:


1) Refrigerate bread for 2 hours.
2) Then cut bread into small pieces and deep fry them.
3) Heat oil in a pan.Add cumin seeds.When it splutters,add onion.Fry till tender.
4) Add chopped tomato and fry till it forms thick gravy with onion.
5) Then add powders and salt.Fry till the raw smell goes.
6) Finally add fried bread and mix well.Spread dania leaves and serve hot.

ONION GARLIC PULIKULAMBU / POONDU KULAMBU


INGREDIENTS:

Sambar onion - 1 cup
Garlic cloves - 1 cup

Tomato - 1 (medium)

Tamarind - a big lemon size

Mustard,Jeera and Methi seeds - 1 tsp

Curry and coriander leaves

Jaggery - a pinch(optional)

Sambar Powder - 2 tsps

Asafoetida as required

Salt to tase

METHOD OF PREPARATION:

1) Heat oil in a kadai.Add mustard,jeera and methi seeds.When it splutters,add onion and curry leaves.

2) After 2 minutes,add garlic .Fry till onion and garlic becomes tender.

3) Then add chopped tomato.wait till it forms thick gravy.

4) Add sambar powder and salt and saute for 2 minutes.

5) Add thick tamarind extract and allow to boil in medium flame tii the oil separates out.Add asafoetida while boiling.Garnish with coriander leaves before removing from the flame.

Serve hot with rice or puliyotharai.

BISI BELA BATH


INGREDIENTS:
Rice - 1 cup
Toor dal - 1 cup
Carrot - 1
Onions - 1 cup
Turmeric powder - 1/2 tsp
Red chillies - 8
Mustard - 1 tsp
Curry leaves and Coriander leaves
Tamarind - Lemon size
Salt to taste
Green peas - 1 cup
FOR MASALA :

Fenugreek seeds - 1/2 tsp
Coriander seeds - 2 tsp
Red chillies- 8
Channa dal - 1 tsp
Cloves,Elachi - 1
Cinnamon - 1
Kus kus - 2tsp
METHOD OF PREPARATION:

1) Pressure cook rice,dal, a pinch of turmeric powder,2 tsps of oil ,asafoetida,carrot and peas with with 6 cups of water for 2 whistles.
2) Heat oil in a frying pan and fry mustard,urad dal.When it splutters,ass curry leaves and chopped onion.fry them till tender.
3) Then add chopped tomato.Fry for a minute.
4) Add tamarind juice, salt to taste and allow it to boil till the raw smell leaves.
5) Add masala and boil for another 5 minutes till the masala smell leaves.
6) Finally add this mixture to rice and dal and mix well.Bisi bela bath is ready to serve with pappads. Garnish with chopped coriander leaves and add some ghee just before serving.

OATS DOSA

Sending this recipe to Divya's Diet Foods Event :)

Here comes dosa,









INGREDIENTS:

Oats - 1/2 cup
Cumin seeds - 1/4 tsp
Pepper - 1/4 tsp
Curry leaves
Cheese-1 tsp


METHOD OF PREPARATION:

1) Mix water with oats to make dosa batter.
2) Powder Cumin seeds,Pepper and Curry leaves.
3) Make plain dosas,spread powder and cheese over it.

Serve hot wih Sambar or Chutney.

TIPS TO HAVE A CLEAN KITCHEN

Here are some of the tips to have a clean kitchen .

1) Cover your gas stove .

           Take aluminium foil , mark the size for the burner and cut that exact portion . Clean the stove,place the foil leaving the burners in the exact position and then place the stove tops,stands. Burnt or any splilled food will fall only in the foil . Remove the foil , everyday/once in 2 days as per your need . This is help to you stove looks as good as new without scratches.

2) Kitchen cleaning clothes . 

 I normally use cotton / soft baniyan clothes for cleaning the kitchen cabinets/platform . This will be very soft , cleans the dirt neatly , absorbs water properly and leave your platform perfect clean.

3) You can either tape aluminium foil in the walls behind the stove . Sometimes , pressure cooker splills oil or dal water to your walls . Remove them after cleaning and cooking . Place them at the time of cooking .

4) Wash  the kitchen clothes daily with dettol / soap solution to avoid smell and dry them in sunlight .

5) Wash and dry up your vessel cleaning scruppers in sun .Wash them frequently while cleaning vessels , as some may have hard strains . Dipping of the same scrupper with clean in solution to clean up the next vessel is useless and food smell will not leave them.

6) Leave a small piece of coal in refrigerator to avoid bad smell when you keep cut veggies inside .Clean up your freezer with lemon juice to avoid fungus growth due to condensation.

7) Don't stuff you fridge . Get your veggies on daily basis ...and leave them only in Vegetable Tray to avoid spoiling of Veggies.

8) Store tamarind only in plastic containers, sugar in glass bottles/plastic containers with few pepper corns to avoid sticking together. 

9) Dry up your vessels completely after washing and then place them in Cabinets as sometimes the moisture in them causes smell in cabinets/will spoil the cabinets.

10) Clean you lunch boxes and water bottles with hot water to avoid smell and remove oil/food smell in it ....
