CHEESE AND POTATO PIE


INGREDIENTS: 

Potatoes - 150 gms
Garlic and herbs soft cheese - 3 tsps
Onion - 1 finely chopped
Butter - 3 tsps
Salt to taste


METHOD OF PREPARATION:

1. Boil potatoes with a little salt and mash them well.



2. Saute onion in the butter well till transparent.


3) Spread butter on the baking tray.


4) Pour the well-mashed potato into it.


5) Add the onion to it and mix it well with 3 tbsps of Garlic and herbs soft cheese.




6) Spread the grated mozzarella over it.


7) Bake it in the oven at 230 degrees, for 20 minutes till the cheese melt and get a golden crust.


8) Remove from the oven, sprinkle mixed herbs and serve hot.

RAGI MOR KOOZH




INGREDIENTS:

Ragi/ Keppai flour - 5 ladles
Buttermilk- 250 ml
Small onions : 1 handful
Green chillies - 3 chopped
Salt to taste
Sufficient water.

METHOD OF PREPARATION:

1) Take 5 ladles of Ragi flour in a large bowl.
2) Add sufficient water and mix well to get a very thin batter without lumps.



3) Boil 5 cups of water in a heavy bottomed vessel.
4) Meanwhile, prepare buttermilk.
5) Once the water boils, slowly mix the batter in the boiling water without any lumps as seen in the video. Continuous stirring is essential.



6) Cook in slow flame, once it starts thickening add onions, green chillies and mix well. Remove from the flame after 5 minutes. 



7) Finally mix the buttermilk with salt. Mix it up well. Healthy Ragi Koozh is ready to be served.

Spinach Barley Pulao




INGREDIENTS :

Barley - 50 gms
Spinach - 1 bunch
Onion - 1
Green Chillies - 2
Ginger - garlic paste - 1 tsp
Fennel Seeds - 1 tsp
Cinnamon - 2
Cloves - 1
Salt to taste
Chilli powder - 1 tspGaram masala powder -- 1 tsp
Turmeric powder -- 1 tsp
Coriander leaves

To grind :


Spinach , Fennel seeds,Cinnamon ,Cloves and Coriander seeds

METHOD OF PREPARATION :


1 ) Cook barley in a pressure cooker with water for 5-6 whistles or till done . 
2) Meanwhile , heat oil in a pan .Add chopped onion and saute till transparent.
3) Add ginger garlic paste and grinded masala with all the spice powders and salt.
4) Finally ,mix cooked barley to it well.Once done remove from the flame.

Serve hot.

CHOCOLATE WHEAT PANCAKE



A yummy and truly drooling pancakes with the two secret ingredients , Chocolate and Milk given by Lakshmi priya for April's Challenge...SSshh Secretly Cooking challenge by Priya akka.

INGREDIENTS :

Wheat flour - 1/2 cup
Bar Chocolate - 2 /Choco chips - few 
Milk - 1/2 cup
Sugar - 3 full scoops
Butter
Baking soda - 1/4 tsp
Chocolate ice cream - 2 tbsps

METHOD OF PREPARATION :

1) Blend chocolate icecream,bar  chocolate and milk well.
2) Mix Wheat flour , chocolate milkshake,baking soda and sugar well with little sufficient water.Batter should be smooth and thick .
3) Heat pan . Spread batter on it once hot , little thick . Spray butter to it and flip it's sides till done.

Serve hot .

WHEAT DOSA / GODHUMAI DOSAI



INGREDIENTS :


Wheat flour - 1 cup
Salt to taste
A pinch of Asafoetida

METHOD OF PREPARATION:

1) Mix sufficient water to the wheat flour with salt,asafoetida and water .The batter must be thin without lumps.

2) Heat dosa tawa. Once hot, spread a spoon of oil and then spread a ladle of the batter for dosa . Spread a tsp of oil around it . Flip to the other side till done .

Serve hot with hot chutneys.

BREAD DOSA TOAST


A yummy different taste tried from Ez Cookbook .Thank you dear for sharing a tasty toast.

INGREDIENTS:


Wheat bread - 4 slices
Dosa batter -1 cup
Onion -1 finely chopped
Coriander Leaves finely chopped
Curry leaves -few
Green chilly -2 finely chopped
Ginger -1 tsp finely grated
Salt to taste
Cumin seed  -1/4 tsp
Mustard seed-1/4 tsp

METHOD OF PREPARATION :

1. Mix all the ingredients with batter except bread .
2. Season it with Cumin and mustard seeds .
3. Heat dosa tawa.Dip the bread in the seasoned batter and toast it till golden brown.
5. Flip it to the other side till done.

CURD OATS


Today , i share a yummy simple comfort breakfast .

INGREDIENTS :

Oats - 1/2 cup
Salt to taste
Curd - 1/4 cup
Milk - 2 tsps

For tadka:

Mustard-1/2 tsp , Green chillies  - 2 finely sliced , Ginger - 1 tsp grated and Curry leaves.

METHOD OF PREPARATION :

1. Boil oats with sufficient water till done.
2.Switch of the flame . Add curd to it and mix it up well with milk too.
3.Temper it with tadka.

A Quick tasty breakfast is ready.Linking it with ENFF Event by Nivedita

VEGETABLE OATS PORRIDGE



INGREDIENTS :

Oats - 1/2 cup
Water - 3/4 cup or sufficient
Boiled vegetables - 1 cup of Potato,Peas,Carrot,Spinach
Chilli powder - 1 tsp
Salt to taste
Crushed pepper - 1/2 tsp
Turmeric powder - 1/2 tsp

METHOD OF PREPARATION :

1. Boil oats with water .
2. When half cooked , mix boiled veggies to to it with salt and all spice powders .
3.Stir it continuously till done . Serve with crushed pepper to it.

LITTI CHOKHA FOR SNC CHALLENGE




Nupur of Uk Rasoi challenged the Southern team of  South vs North Challenge an wonderful event by Divya Pramil while Priya akka challenged Northern team with popular Mangalorean snack Goli Baje.

For Litti:

Wheat flour - 1 cup
Ajwain/carom seeds - 1/4 tsp
Ghee - 1/2 tsp
Baking soda - 
1/4 tsp 
Salt to taste
Warm water for kneading

For Stuffing/Pitthi:


Sattu(roasted gram flour) - 
1/4 cup 
Grated ginger - 
1/2tsp 
Coriander leaves (finely chopped) - few
Green chillies - 2
Cumin seeds - 1/4 tsp
Ajwain (carom seeds)-
1/4 tsp 
Pickle (i used mango pickle)- 1/4 tsp
Salt to taste

For Chokha:


Potatoes (boiled & peeled) - 

Garlic cloves - 3
Onion (finely 
chopped ) - 1
Tomato (big) - 1
Green chilly (finely chopped)- 1
Grated ginger- 
1/2 tbsp 
Coriander leaves - few
Salt to taste


METHOD OF PREPARATION :

For Litti: 


  1. Sieve the wheat flour well.
  2. Add all the ingredients except the ghee .
  3. Knead a stiff and soft dough and keep aside for half an hour.


For Stuffing/Pitthi : 



  1. Mix roasted gram flour, grated ginger, green chillies,coriander leaves,ajwain seeds,oil, mango pickle and salt well and keep aside.
  2. Take medium sized balls of the dough, with a rolling pin roll it , place a tablespoon of stuffing,seal the stuffing with the dough well .
  3. Flatten the dough and repeat the same process for the remaining dough.
  4. Preheat the oven to 200 deg.c, place the balls over a baking pan and bake for 30 minutes, flip the balls in between twice till done.


For Chokha:


  1. Mash the well boiled potatoes and keep aside. 
  2. Roast the garlic and tomato in a pan .Allow them to cool .Peel the skins and mash them with a spoon.
  3. Add the chopped green chillies, grated ginger,coriander leaves, chopped onions, salt, oil .Mix  them well and keep them in a  bowl.
  4. Drop few tsps of ghee over hot Litti and serve with chokha or Break the litti in the centre,pour some ghee and chokha.

ALOO KATORI WITH CHANNA CHAT FOR POTLUCK




  Potluck party is a monthy event by Jagruti bhabhi ....where we prepare recipes prepared our dear fellow bloggers participating in the event . For this month''s party , i tried out Pradnya 's Potato Katori chaat with slight modification for my kids , I used wheat flour to make a bit thick crust .My son who is a picky eater enjoyed having this yummy healthy chaat .

For the Katori:

Potatoes - 2 large 
Salt  to taste
Turmeric Powder - 1 tsp
Wheat flour  - 1/4 cup




For  the Chaat:

Chole - 100 gms 
Boiled and chopped Potatoes -2 tbsps 
Onion -1 large 
Green chutney(Mint chutney) - 1 Cup
Tamarind chutney - 1 Cup
Sweet Curd - 1 cup
Chaat masala - 2 tbsps
Roasted cumin Powder - 1 tbsp
Black Powder -1 tsp
Red chilli Powder 1 tbsp
Salt to taste
Aloo bhujiya for garnising
Coriander leaves 

METHOD OF PREPARATION :

1) Peel the skin and grate the potatoes. 

2) Heat oil in kadai .Meanwhile, take handful of grated potatoes and squeeze the excess water pressing with both the hands. Dry it on Kitchen tissues for 2-3 mins. Then boil it in water for till soft.. ..Meanwhile fry few potatoes for 2-3 minutes and keep aside.
3) Mix potatoes,Wheat flour, turmeric,salt together. Knead it well and make pooris of it.Meanwhile channa for chole with the spices .

4) Serve katori with chole,potato pieces, chutneys and curd.

5) Garnish with finely copped Onion , Aloo bhujiya and minced Coriander leaves. 

Katori Chaat is ready to serve. Linking it up with Jagruti's Potluck Party .

KARUPATTI KUZHI PANIYARAM






INGREDIENTS :

Boiled rice - 1 cup
Raw rice - 1 cup
Urat dal - 1  handful
Karuppatti - 250 gms/Normal jaggery 



METHOD OF PREPARATION :

1) Make thick palm jaggery syrup .
2) Filter it and remove the impurities with a strainer once cooled.
3) Soak rice and dal for only 2 hours and grind it to a very smooth batter not so watery like for aappam.No fermentation needed.
4) Finally , mix palm jaggery syrup with the batter without any lumps.
5) Heat paniyaram pan . Spead a spoon of oil in each hollow of the pan . Then pour a small ladle of batter in the each hollows and cover with a lid .
6) Cook in slow flame , after 3-4  minutes flip it to the other side till done .

Serve hot .

DATES AND NUTS MOMOS



INGREDIENTS :

Dates- 1 cup 
Crushed nuts - 1/4 cup(Cashews,Almond , Pista)
Sugar to taste
Elachi - 2
Grated coconut - 1/4 cup
Plain flour - 1 cup
Oil

METHOD OF PREPARATION:




1) Finely chop the dates .
2) Once done, heat a spoon of ghee in a pan . Saute dates and coconut for 2 minutes and add the crushed nuts.Add sugar.
3) Sprinkle little water and cover with a lid . Cook till the raw smell leaves .
4) Grind them a bit coarsely.
5) Meanwhile , knead soft dough of flour with oil .
6) Roll a small ball of flour . Place a small ball of dates in the centre and fold its corners to the centre.
7) Steam cook the momos in idli pan / microwave.

GUJARATI FARSAN - KHANDVI FOR SNC CHALLENGE

For this month's SNC Challenge ,Hetal Acharya of Gujarati Zaika challenged south team with this tasty yummy khandvi.We loved it..thank you hetal for sharing us this delicious recipe.



INGREDIENTS:

Besan flour - 1 cup
Sour curd - 1/2 cup
Water -  1 1/2 cups
Turmeric powder - 1/4 tsp
Sugar - 1 tsp
Salt to taste.








For Tadka :


Mustard seeds - 1 tsp
Asafoetida - 1/2 - 1 tsp
Til - 1/2 tp
Curry leaves - few

Green chilly - 1
Red chilly - 1
Coriander leaves and Grated coconut - 2 tsps for garnishing.



METHOD OF PREPARATION  :




1) Mix besan flour,curd,turmeric powder,salt,sugar and water well without lumps to a smooth batter .


2) Filter the batter if any lumps present using a strainer .

3) Heat a non stick pan and pour the batter to it, stir continuously for few minutes on slow flame till it becomes thick and raw smell of the batter leaves.

4) Spread spoon of the batter on a clean plate, wait for few seconds , roll it out ,the batter shouldn't be sticky to the plate . If fine ,then spread the whole batter to the plate and cut it off with a knife and then roll off.

5) Arrange it in a clean another plate .

6) Meanwhilte ,heat oil  in a kadai .Once hot ,add mustard seeds, sesame seeds .When it splutters ,add asafoetida,chopped green chilly ,red chilly and curry leaves..

7) Sprinkle the tadka over the rolls .Garnish with chopped coriander leaves and grated coconut.
