MUSHROOM VEGETABLES BIRYANI (IN RICE COOKER)



INGREDIENTS :

Mushroom - 200 gms
Peas, Carrot, Potato, Bell pepper - 1 1/2 cup
Onion - 1 big
Tomato - 2
Green chillies - 4
Mint leaves , Coriander leaves
Salt to taste
Ginger - garlic paste - 1 1/4 tsp
Chilli powder - 1 tsp
Garam masala - 1/2 tsp
Cinnamon - 2
Cloves - 1
Bay leaves - 2


METHOD OF PREPARATION :

1) Soak rice for 20 minutes. Clean mushroom in running water and slice them in halves.



2) Heat ghee in a kadai . Once hot, add add cinnamon , cloves and bay leaves, chopped onion. Saute till onion becomes tender.


3) Then,add chopped tomato, , split chillies . Once it becomes skinny , add ginger-garlic paste and mint, coriander leaves.


4) Add Vegetables and little water and cover with a lid. Cook till half cooked and tender. Then, add in mushroom,salt, Chilli powder, Garam masala and saute for 10 minutes .



5) Meanwhile, wash rice well and soak in water for 20 minutes. Then, add it to the rice cooker with 1 cup of water.


6) Add in the prepared vegetables and mushroom mix to it with very little water. Cook till done.


Serve hot with Raitha.

MUSHROOM IN COCONUT MILK GRAVY

 




INGREDIENTS : 

Mushroom -- 200 gms 
Chilli powder -- 2 tsp 
Turmeric powder -- 1 tsp 
Garam masala -- 1 tsp 
Jeera -- 1 tsp 
Cloves- 2
Bay leaves - 3
Cinnamon sticks- 2 small
Phool - few
Annasi poo - 2
Salt to taste

To grind :

Onion -- 1 big
Tomatoes -- 1


METHOD OF PREPARATION : 

1. Heat oil in a pan. Once hot, add cloves, cinnamon sticks, bay leaves, annasi poo. When the flavour rules out, add grinded masala, coconut milk, salt and little water. Add in the chilli powder, garam masala, turmeric powder. 




2) Then, add chopped mushroom pieces. Cover with a lid and cook in slow flame till the oil separates . Garnish it with Coriander leaves.


Remove from the flame and serve hot with Parathas or Roti.

GARLIC MUSHROOM



INGREDIENTS :

  • Mushrooms - 200 gas
  • Garlic cloves -8
  • Turmeric powder - 1 tsp
  • Spring onion - 1 small bunch
  • Spicy Tomato Sauce - 2 tbsps
  • Salt to taste

METHOD OF PREPARATION :

1) Heat oil in a pan. Saute crushed garlic till the raw smell leaves.



2) Add finely chopped spring onions and sauce well. Then, add sliced mushrooms and fry for few minutes.


3) Add turmeric powder and tomato sauce. Toss it well, add salt and mix it well. 



Serve hot with Rice or Roti.

PEPPER MUSHROOM



Mushrooms are rich in Vitamin B, good for red blood cell and protects the digestive system, maintains healthy skin.Here comes a simple and my hubby's favourite mushroom recipe .


INGREDIENTS :


  • Mushroom - 200 gms
  • Powder 2 tsps of Pepper and Jeera
  • Curry leaves - few
  • Onions - 1 cup finely chopped
  • Red chillies - 3
  • Turmeric powder - 1 tsp
  • Salt to taste

For Tadka : Mustard - 1 tsp and Jeera - 1 tsp

METHOD OF PREPARATION :

1) Heat oil in a pan. Once hot, add mustard, jeera and red chillies. When it splutters, add onions and curry leaves. Saute till tender .



2) Add Turmeric powder and Salt. Mix it well. Grounded pepper and jeera .


3) Add chopped mushrooms and saute well .
























4) Add Grounded pepper and jeera . Mix it well. Cover with a lid and cook in slow flame till tender. Add spoon of oil and mix it well. Remove from flame once done .

Serve hot with Rice.

MUSHROOM KHEEMA DOSAI


INGREDIENTS :

Mushroom -- 200 gms
Chilli powder - 1 tsp
Chicken masala - 1 tsp
Pepper and Jeera powder- 1/2 tsp
Turmeric powder - 1/2 tsp
Tomato sauce - 1/4 tsp
Salt to taste
Dosa batter

METHOD OF PREPARATION :

1) Heat oil in a pan. Saute finely chopped onion and tomato till tender. 


2) Add in finely chopped mushroom with the spice powders. Cook till soft and tender.

) Make dosa and spread the mushroom over it and roll it over.


Serve hot.

CHILLI MUSHROOM



INGREDIENTS :

Mushroom -  200 gms
Onion -1 sliced
Salt to taste
Chicken fry masala - 2 tsps
Dried mint -1/4 tsp
Chilli sauce/Tomato chilli sauce - 2 tsps

METHOD OF PREPARATION :


1) Heat oil. Once hot, add sliced onion. Saute till tender.





2) Add mushroom with the all spice mix till done .Finally , toss it up with dried mint .



Serve hot with roti or as a starter.

MUSHROOM AND PEAS PULAO




INGREDIENTS :

Basmati Rice - 1 cup
Mushroom - 250 gms
Peas - 1 cup
Green chillies - 3 split
Onion - 1 big
Mint / Coriander leaves - 1 handful
Salt to taste
Chilli powder - 1 1/2 tsp
Cloves - 2
Cinnamon - 2
Garam Masala -  1 tsp

To Grind:

Fennel seeds - 1/2 tsp
Coriander seeds - 1/2 tsp
Ginger - 1 small piece
Garlic cloves- 3




METHOD OF PREPARATION :

1) Soak basmati rice in water for 15 minutes.
2) Meanwhile , saute whole spices in a spoon of ghee in a pressure cooker. Followed by sliced onion and green chillies till tender.



2) Then add sliced onions and saute till tender.



3) Add the grinder masala and saute till the raw smell leaves.



4) Add peas and mix it well.



5) Add sliced mushrooms, turmeric powder, chilli powder and garam masala to it and mix it well.



5) Add 1 cup of water and add rice to it. Mix it well, add coriander leaves and pressure cook for 2 whistles. Allow the steam to leave.




Serve hot with Raitha.
