GREEN MOONG DAL VADA / PAASIPAYAR VADAI


A super simple vadai for my dear friend Divya Prakash on her birthday....Wishing you a wonderful year ahead dear .....She is such a sweet and lovely friend....


INGREDIENTS :

Green gram dal -- 1 cup
Channa dal -- 1/2 cup
Ginger garlic paste -- 1 tsp
Onion -- 1
Red chillies -- 3
Curry leaves
Salt to taste


METHOD OF PREPARATION : 

1) Soak green gram dal and channa dal for 4 hours .
2) Grind them with ginger garlic paste,salt and red chillies .
3) Add chopped onion and curry leaves to the batter .
4)Heat oil for deep frying . Once hot , take a small ball size batter ,flatten it and fry them .

Serve hot with chutneys .

Paasipayar Vadai / Green Moong Dal Vadai



 INGREDIENTS:


Green Moong whole - 1 cup

Green chillies - 3 nos

Curry leaves(chopped) as required

Salt to taste

Onion(chopped) - 1 (big)

Ginger - small piece 

Jeera - 3 tsps

METHOD OF PREPARATION:


1) Soak green gram in water overnight.

2) Grind them well with salt.Then to the batter add finely chopped ginger , curry leaves ,  finely chopped onion,green chillies,and jeera.

3) Mix them well.

4) Make small balls and flatten them. Spear your hand with oil and flatten them.

5) Meanwhile ,heat oil in a kadai.Once hot,deep fry vadas.Fry them till it turns golden brown and crispy .

Serve hot with chutney .Linking it with Vegan Thursday by Priya Akka.

SAMBAR VADAI



A yummy truly Tamilian recipe to share with you all.....My hubby's most favourite starter , first placed order in any restaurant in Tamilnadu.

For Vadai :



INGREDIENTS:

Urat dal - 1 cup
Salt to taste
Jeera - 1 tsp
Green chillies - 2
Turmeric powder - 1/2 tsp
Onion - 1

METHOD OF PREPARATION :

1) Soak dal in water for 1 hour.Grind it without water , if watery add 2 tsps of rice or besan flour.
2) Add chopped onion and green chillies with less salt to the batter .Mix well and smear ur hands with oil,make small balls ,flatten and deep fry them.

For Sambar : 


INGREDIENTS:

Toor dhal - 1 cup
Pearl onion - 1/4 cup chopped
Tomato - 1 finely chopped

TO GRIND:

Tomato - 1
Roasted gram/Pottukadalai - 1 tbsp
Turmeric powder- 1/4 tsp
Coriander powder - 1 tsp
Grated coconut - 2 tsp

Tadka:

Mustard - 1/4 tsp
Methi seeds - 1/4 tsp
Cumin  - 1/2 tsp
Urat dal - 1 tsp
Onion - few chopped
Curry leaves - few
Green chillies - 2
Coriander leaves - 1 handful
Asafoetida- few tsp


METHOD OF PREPARATION:

  1. Pressure cook onions, tomatoes, dal with sufficient water .Cook for 6-7 whistles and then mash the dal well.
  2. Add the grind masala with little water to the dal .Add salt to it and mix it well.
  3. Heat oil in a pan, add mustard seed, methi seeds, cumin , urat dal .When it splutters, add the finely chopped onion , curry leaves and finally add this to the dal.Add asafoetida.
  4. Mix well and cook for 5 min. Garnish with coriander leaves and serve.

For Sambar Vadai :


Serve Vadai's soaked in Sambar with few Karaboondhi garnishing.

VENDHAYA KEERAI VADAI




INGREDIENTS :

Methi leaves - 1 cup
Channa dal - 1 cup
Green chillies - 2 finely chopped
Onion - 1 finely chopped
Ginger - 1 small piece
Salt to taste.

METHOD OF PREPARATION :

1 ) Soak channa dal for 1 hour .
2) Drain the stock and blend with the other ingredients .
3) Make small balls of the batter , flatten them and fry them.

THAYIR PANIYARAM / CURD PANIYARAM FOR MY FRIEND PREETI .


Tried out this yummy snack for my friend , Preeti of Indian Kitchen  as a treat for her virtual birthday party .

INGREDIENTS:

Raw rice - 1 cup
Thick and sour curd - 5-6 tbsp 
Onions - 1/2 cup finely chopped
Chilli flakes - 2 tsps
Ginger-garlic paste - 1/2 tbsp 
Chopped coriander and curry leaves - few
Cumin seeds - 1/2 tbsp 
Salt to taste

METHOD OF PREPARATION :

1. Wash the raw rice. Heat water in a kadai. Once it starts boiling, add rice to it. Cook for some 3-5 mins. Drain the water completely and allow to cool.

2. Grind the rice along with curd in a mixer to fine batter.

3. Add chopped onions, curry leaves, coriander leaves, ginger-garlic 
paste and cumin seeds to it.Mix well with salt .

4. Keep aside for 5 mins. Heat oil in a heavy kadai. Make small balls of the batter .

5. Deep fry the balls till it turns golden brown. 

Serve hot with chutney .

MASALA VADAI / PARUPPU VADAI





 INGREDIENTS:


Channa dal - 1 cup

Green chillies - 3 nos

Curry leaves(chopped) as required

Salt to taste

Onion(chopped) - 1 (big)

Ginger - small piece 

Jeera - 3 tsps

METHOD OF PREPARATION:


1) Soak channa dal in water for 1 - 2 hrs.

2) Grind channa dal coarsely with salt.Then to the batter add finely chopped ginger , curry leaves ,  finely chopped onion,green chillies,and jeera.

3) Mix them well.

4) Make small balls and flatten them. Spear your hand with oil and flatten them.

5) Meanwhile ,heat oil in a kadai.Once hot,deep fry vadas.Fry them till it turns golden brown and crispy .

Serve hot with chutney .

THAYIR VADAI - SOUTH INDIAN HOTEL STYLE





INGREDIENTS:

Urat dal - 1 cup
Curd - as per requirement
Rice flour - 2 tbsp
sSalt to taste
Red Chillies - 3
Coriander leaves - few
Curry leaves
Mustard - 1 tsp
Urat dal - 1 tsp

METHOD OF PREPARATION :

1) Soak dal in water for 1 hour.Grind it to a smooth batter with less water .Add 2 tbsps of rice flour.

2) Meanwhile , heat oil in a kadai . Fry vadai golden brown and keep aside .

3) Transfer thick curd with salt to a large bowl and soak vadai's in it for 1 hour / refrigerate it . 
4) Temper it with Mustard ,Urat dal , Chillies,Curry leaves and Coriander leaves . Serve hot .
