LEMON SEVAI (Idiyappam)


INGREDIENTS :

  • Cooked Sevai or Idiyappam - 2 Cups
  • Lemon Juice  - 2tbps
  • Turmeric Powder  - 1tsp
  • Peanuts - 2 tsps
  • Mustard  - 1 tsp
  • Channa dal  - 1 tsp
  • Asafoetida  - a pinch
  • Green Chillies  - 3
  • Curry Leaves  and Coriander leaves
  • Salt to taste


METHOD OF PREPARATION :

1.Steam cook sevai or idiyappam and keep it aside.

2.
Heat oil in a kadai.Once hot, add mustard seeds , channa dal,peanuts and chillies and saute till peanuts gets roasted well not burnt.Then add asafoetida and curry leaves. 



3. Then ,add lemon juice with turmeric powder and saute it for a minute. Followed by adding salt .



4.Mix the sevai or idiyappam well for 2 minutes till it gets the flavour of lemon. Garnish it with finely chopped onion and coriander leaves.


 
Serve hot with Crisps or Chips or Chutney.

CHEESY VEGETABLES PASTA IN RED SAUCE



INGREDIENTS :

  • Farfelle - 500 gms
  • Veggies - 1 cup
  • Cheese -2 slices
  • Salt to taste



FOR RED SAUCE :

  • Soak two tomatoes (big) and dried red chillies in hot water for an hour and then grind them finely to a paste.
  • Mix 2 tsp of Plain flour in water without any lumps and keep it aside. Add little milk to it.

Heat butter in a pan. Once it gets melted, pour in the flour water and saute till it comes to a thick consistency, mix the tomato paste and mix it it thickens.




METHOD OF PREPARATION :

1 ) Heat oil in a pan. Saute the vegetables well with Salt till cooked . 


2) Meanwhile , Boil pasta  in a separate pan. Drain the stock and keep aside. 


3) Once the vegetables are cooked, mix pasta and the prepared sauce to it. Mix it well. Add grated Cheese before removing from the flame.


Serve hot.

VEGETABLE SPAGHETTI



INGREDIENTS :

  • Wheat Noodles/ Spaghetti  - 500 gas
  • Onion - 1 chopped
  • Mixed veggies - 1 cup
  • Salt to taste
  • Bell pepper - 1
  • Chilli powder - 1 tsp


METHOD OF PREPARATION :


1) Heat oil in a pan. Add chopped onion and bell pepper, saute till tender.


2) Add mixed veggies with spice powders, salt and water. Cover with a lid and cook till done.


3) Meanwhile, boil noodles in a separate pan and drain the stock. 


4) Once the vegetables are cooked, add noodles and cook till done .Check for salt and spice.

Serve hot .Party Snacks Food by Snehidhi.

RICE PUTTU





INGREDIENTS : 

Rice flour - 2 cups
Salt to taste
Sugar 
Ghee
Grated Coconut.

METHOD OF PREPARATION :

1) Sieve the flour in a bid bowl . Add the salt to it and mix well .
2) Sprinkle little water and slowly mix it up .See to that the flour is wet .Sprinkle water little by little , flour must not be sticky or watery . Dont add water in a full stretch .
3) Place them in an idli pan and cook it .
4) Serve with Ghee roasted coconut and sugar toppings.

EGG PASTA



INGREDIENTS :


Egg - 2
Ilalian seasoning
Penne Pasta - 100 gms
Hot Salsa sauce
Salt to taste


METHOD OF PREPARATION :


1) Heat oil and add eggs to it and stir it fell , till the egg is cooked well and doesn't stick to the pan.



2) Add salt and hot salsa sauce . Mix it up well .


3) Add boiled pasta to it and mix it well. Add herb seasoning. 




4) Finally, mix a tbsp of mixed vegetables to it. Serve hot.

MIXED VEGETABLES CHEESE PASTA


INGREDIENTS :

Pasta - 150 gas
Mixed vegetables- 1/2 cup
Hot salsa sauce -  2 tbsps
Cheese slice - 1/2
Garlic butter - 1 tbsp
Italian seasoning
Salt to taste


METHOD OF PREPARATION : 


1) Boil pasta separately and keep aside .


2) Heat oil in a pan . Once hot , saute the veggies and salt . Sprinkle little water , cover with a lid and cook in slow flame till tender .


3) Once done , add hot salsa sauce .Mix it up well .

4) Add Garlic butter and mix it well, followed by herb seasoning and Cheese.




5) Serve hot.

ORANGE PANCAKE


INGREDIENTS : 


Plain flour - 1 cup

Eggs - 2

Sugar - 1 cup

Oranges - 6 

Buttermilk butter - 2 tbsps

Baking powder - 1/2 tsp




METHOD OF PREPARATION : 


1) Take the flour in a bowl. Add 1/2 tsp of baking powder and Sugar. Mix it well.

2) Add Orange juice and butter milk to it and mix it well without lumps.


3) Add eggs to it and beat it well. Set aside for 10- 15 minutes.


4) Heat tawa and make pancakes like dosa .

6) Flip to its sides till done.

Serve it with Jam or Jelly or Spread honey and roll the pancake .Linking it up with Roshini's  Healthy food for kids event , initiated by Nithu bala.

MIXED VEGGIE VERMICILLI UPMA



INGREDIENTS

  • Mixed vegetables - 1 cup
  • Channa dal - 2 tsp
  • Ginger - 1 small piece
  • Capsicum - 1/2 chopped
  • Mustard - 1 tsp
  • Tomato - 1 big
  • Sambar powder - 2 tsps
  • Roasted Vermicilli - 200 gms
  • Coriander leaves


METHOD OF PREPARATION :

1) Heat oil in a kadai . Once hot , add mustard, jeera, channa dal and Onion . Saute till onion becomes transparent.

2)Add chillies ,ginger and tomato. Saute well till tender .




3) Then, add the vegetables, salt and all spice powders . 



4) Add sufficient water for the vegetables to soften. Cover with a lid. Cook for 5 minutes till the vegetables are soft.

5) Finally, add vermicilli and mix it up .  Cover with a lid and cook in slow flame till done.
Garnish it with coriander leaves.

BREAD UPMA




INGREDIENTS : 

Whole grain bread - 6
Red Onion - 1
Tomato - 2
Green Chillies - 3
Channa dal - 1 tsp
Mustard and Jeera - 1 tsp each
Chilli powder - 1 tsp
Turmeric powder - 1 tsp
Garam masala - 1 tsp
Curry and Coriander leaves
Salt to taste


METHOD OF PREPARATION :

1) Heat oil in a kadai . Once hot , add mustard and Onion . Saute till onion becomes transparent.

2)Add chillies ,ginger and tomato. Saute well till tender .

3) Cut bread to small cubes . Add it to the vegetables. Sprinkle little water to it and add chilli powder , turmeric powder and salt to it . Mix it well. Leave aside for 5 minutes.



Garnish it with Coriander leaves . Serve hot.

KARUPATTI (PALM SUGAR) IDIYAPPAM


INGREDIENTS:

Rice Flour - 1 cup
Palm sugar/ Karupatti - 250 gms. Boil it with 1 cup of water . Once it dissolves,allow it to cool and filter the impurities .
Ghee as per preference.
Shredded coconut - 1 cup

METHOD OF PREPARATION:

1) Sieve the rice flour finely. 


2) Mix in syrup to the flour and knead it into a soft dough.



3) Fill in the 'idiyappam' presser with the dough and press it on to idli plates and steam for 5-10 minutes till done.


Serve hot with shredded coconut and ghee.
