CHILLI BREAD


INGREDIENTS :

  • Bread - 3 slices
  • Onion- 1(big)
  • Tomato-1 (medium)
  • Chilli powder-1 tsp 
  • Chilli tomato sauce - 2 tbsps
  • Salt to taste
  • Parsley - few

METHOD OF PREPARATION:

1) Heat oil in a pan. Saute onion till tender.


2) Add green chillies and tomato together.


3) Add in the sauce and mix it well with salt.


4) Meanwhile, cut the toasted bread in cubes.


5) Add in the bread, mix it well. Garnish it with Parsley.


Serve hot.

VEGETABLE OMELETTE CURRY


INGREDIENTS:
 
 
Mixed Vegetables - 1 cup
Channa dal flour - 1/2 cup
Salt to taste 
Chilli powder - 2 tsp 
Garam masala powder - 1 tsp 
Turmeric powder- 1/2 tsp 
Jeera - 1 TSP

For Gravy:

Onion- 1 big
Tomato- 1
Chilli powder-1 tsp
Dried curry leaves- few
Turmeric Powder- 1/2 tsp
Coriander powder-1 tsp
Salt to taste.

 METHOD OF PREPARATION: 



 1) Mix besan with little water to form a smooth batter.

2)Then mix veggies in the batter . Add chilli powder,Then turmeric powder, jeera, kasturi methi and salt. 


3) Heat dosa pan and make omelette.



4) Transfer to the plate and cut them.



 For srilekha's EFM - Savories Eventut the omelet into pieces and serve with cheese.
VEGETABLE OMELETTE CURRY :

METHOD OF PREPARATION :

1) Heat oil in a kadai . Add mustard and  jeera, when it splutters, add chopped onion and saute till tender.

2) Then add curry leaves, tomato,w chilli powder, turmeric powder, coriander powder and salt. 



3) Add a cup of water. Bring it to boil.


4) Finally , add cut omelet pieces and leave for 2 minutes. 


Remove from the flame. Serve hot with rice.

CHEESE POTATOES

Potatoes are one of the vegetables that never disappointed parents whose children are fussy eaters. Any recipe with Potato will always be welcomed by all the children. Cheese potatoes are quick healthy snack for children. This can be prepared in minutes with minimum ingredients.




Servings : 4 people

INGREDIENTS : 

Potatoes - 250 gms
Jeera - 2 tsps
Turmeric powder- 1 tsp
Chilli powder- 2 tsps
Salt to taste
Bread crumbs
Cheese slices

METHOD OF PREPARATION:

1) Peal the skin and boil potatoes.
2) Mash it up well with turmeric powder, chilli powder, jeera and salt.
3) Roll balls of the mashed potatoes and coat it with bread crumbs.


4) Flatten it and place the cheese slices between two flattened Potato balls. Seal the corners well.




5) Heat butter in a frying pan. Once hot, place the potatoes and flip to its side, toast till golden brown.



6) Serve hot . It can be served as a burger too, whichever way your children prefers to have.

BEETROOT POTATO ROLLS




INGREDIENTS ;

Beetroot-2
Potato - 2
Green Chillies-3
Jeera - 1 tsp
Salt to taste
Ginger-garlic paste - 1/2 tsp
Garam masala - 1/2 tsp

METHOD OF PREPARATION ;

1. Boil the beetroot and potato till they soften.
2. mash them well with other ingredients .
3. Roll small portions of it ,coated with biscuit crumps.
4.Finally,deep fry the till golden brown .

Serve hot with sauce.

HERBS MUSHROOM



INGREDIENTS :

Mushroom - 100 gms
Salt to taste
Garam masala - 1/2 tsp
Chilli powder - 1 tsp

To Grind :

Coriander leaves+Mint leaves - 1 handful

METHOD OF PREPARATION :

1. Wash and slice mushrooms .
2.Heat oil in a pan . Saute mushrooms with grinded paste.
3.Add chilli powder,garam masala with salt.
4.Serve hot with Roti's.

FRIED BRINJAL SALAD



INGREDIENTS :


Eggplant / Big Brinjal  - 1
Chilli powder - 2 tsps
Salt to taste
Turmeric powder - 1 tsp
Jeera powder - 1 tsp
Green pepper - 1 
Onion - 1 chopped
Coriander leaves


METHOD OF PREPARATION : 


1) Slice brinjal and mix it with Chillli powder,Turmeric powder , Salt , Jeera powder . Keep it aside for 15 minutes .
2) Toast it on dosa tawa with oil .
3) Once it gets roasted , transfer it to a bowl .
4) With the same oil , saute green pepper and onion .
5) Garnish fried brinjal with sauted pepper , onion and coriander leaves . 


Serve it with Oregano / Italian /Chaat seasoning.linking it up with Street Party Food event.

VEGETABLE CUTLET




INGREDIENTS :

Peas - 1/2 cup
Corn - 1/2 cup
Potato - 1 big
Carrot - 2
Beetroot - 1 big
Chilli powder - 1 1/2 tsp
Turmeric powder - 1 tsp
Garam masala - 1/4 tsp
Krack jack biscuit powdered - 1 1/2 cup
Rice flour - 1 cup
Salt to taste

METHOD OF PREPARATION :

1) Pressure cook the veggies for 7-8 whistles or more with less water . Allow it to cool and mash them .
2) Heat pan , add mashed veggies,sprinkle little water and add chilli , turmeric , garam masala and salt . Mix them well . Remove from flame after 5 minutes .
3) Allow it to cool down .
4) Roll small veggie balls , flatten it . Then , coat both sides with rice flour first and then with biscuit crumps .
5) Tawa fry them in slow flame . Once done , garnish it with biscuit crumps and serve with Jam / Sauce .

MIXED LENTILS VADA / KALAVAI PARUPPU VADAI



INGREDIENTS :

Channa dal -- 1 handful
Toor dal - - 1 handful
Masoor dal - 1 handful
Moong dal - 1 handful
Green gram - 1 handful
Urat dal - 1 handful
Salt to taste
Green Chillies -3
Ginger - a small piece
Onion - 1 big chopped
Curry leaves
Rice flour - 2-3 tbsps
Jeera - 2 tsp

METHOD OF PREPARATION :

1) Soak all the dal for 3 hours .
2) Grind them coarsely with salt , ginger and green chillies.
3) Transfer it to a big vessel , add jeera , chopped onion and curry leaves .Mix it well .If it is little watery , add 2 tbsps of rice flour to it
4) Take a small ball of it and then flatten it .
5) Meanwhile , heat oil in a kadai . Once hot , drop the vadai and cook till turns brown .

Serve hot with Chutney / Sambar .

FRIED PANEER /PANEER 65






INGREDIENTS :

Paneer -- 250 gms
Chilli powder - 1 tsp
Salt to taste
Capsicum - 1 big
Onion - 1 big
Curry leaves
Garam masala powder - 1 tsp
Chicken masala - 1 tsp
Turmeric powder - 1 tsp
Ginger-garlic paste - 1 tsp

METHOD OF PREPARATION :

1) Marinate paneer cubes with all the powders,salt and ginger-garlic paste for 1 hour .

2) Deep fry them and keep aside.

3) Heat oil in a kadai . Fry onion and capsicum with curry leaves till tender .

4) Then add fried cubes to it and cook in slow flame for 5 minutes.

Serve hot as a Starter .

BANANA SNACK / BANANA VADAI



I learnt this recipe from a marati friend . She used green chillies instead of chilli powder .

This goes to Divya's Cooking for Kids -- evening snacks , event started by Sharmi of Neivedyam.


INGREDIENTS :

Ripe bananas -- 3
Besan Flour ---- 2 cups
Onion --- 1 onion
Red Chilly powder -- 4
Salt to taste
Curry leaves
Jeera -- 2 tsp

METHOD OF PREPARATION :

1) Mash banana's and mix them with other ingredients in to a soft dough .
2) Make small balls of it and tawa fry/shallow fry them .

Serve hot with sauce /chutney.

BREAD POTATO BALLS


INGREDIENTS :

  • Potato -- 100 g
  • Bread slices - 4
  • Chilli powder - 1 tsp
  • Ginger-garlic paste -- 1 tsp 
  • Kasturi Methi - 1 tsp
  • Jeera - 1 tsp
  • Salt to taste 
 
METHOD OF PREPARATION :

1) Boil potato and peel the skin . Mashed them well. 

2) Add chilli powder ,ginger-garlic paste , jeera, kasturi methi and salt . 


3) Mix them well with potato. 
4) Cut the corners of bread.Dip it in water and squeeze the excess water .


5) Cut in halves. Stuff with the potato and roll them into small balls.

SWEET BONDA

Egg is optional in this recipe . I prepared half with egg and half without eggs . This photo is a mixture of the two . I forgot to take 2 separate pictures.


INGREDIENTS:

Maida--1 cup
Egg(optional ) --1
Sugar to taste
Milk - as per requirement

METHOD OF PREPARATION :

1 ) Mix all the ingredients to form like idli batter .



2) Heat oil for deep frying . Once hot , Drop batter spoon by spoon . Remove from thr flame,once it turns brown .

VAZHAIPOO VADAI / BANANA FLOWER VADAI

I learnt this recipe from my friend, Anu's mom. They stay in THIRUPPUVANAM , a small historical village near Madurai on Rameshwaram Highway . This village is also located on the banks of River Vaigai .

Lord Shiva's temple located here is a historical famous one . This temple is famous for its Pradhosham pooja . People from in and around Madurai will visit this temple especially on Pradhosams .

My friend's home is surrounded my lovely plantain gardens .So,very often they used to prepare this poriyal . Here comes this recipe for you .



INGREDIENTS:

Banana flower / Vazhaipoo ---1 cup (Cleaned)
Channa dal/Kadalai paruppu -- 1 1/2 cup
Curd-1 tsp
Cumin seeds-1 tsp
Ginger - garlic paste - -1 tsp
Green chillies/Red chillies - 3
Onion - 1 :finely chopped
Curry leaves
Salt to taste

METHOD OF PREPARATION:

1) Soak dal for 2 hours.Meanwhile,before chopping vazhaipoo,remove the central stamen along with a small transparent petal(looks like plastic ).Cut vazhaipoo and put it in a small bowl of water.Add curd to it.So that the colour will not change.
2) Blend dal with vazhaipoo,ginger garlic paste,chillies and salt . Blend it coarsely.
3) Add chopped onion ,cumin seeds and curry leaves to the mixture.
4) Heat oil in a heavy bottomed vessel .Meanwhile make small balls of dough and flatten it.Once the oil is hot,deep fry them .

SPINACH BONDA

INGREDIENTS :

Gram flour - 50 gm
Onion - 1 big
Spinach - 100 gm
Ginger - 5 gm
Red chilli powder - 1 tsp
Ajwain - 1/2 tsp
Salt to taste

METHOD OF PREPARATION :

1) Mix all the pakora ingredients with water . Make small balls out of it.
2) Heat oil for deep frying . Fry them till golden brown and leave aside .

Serve hot with sauce/chutney.

POTATO VERMICILLI BALLS



INGREDIENTS :

Potato - 4 (big )
Ginger garlic paste - 2 tsp
Vermicilli - 1/2 cup
Maida -as per requirement
Salt to taste
Green / Red chillies - 4
Bread crumps

METHOD OF PREPARATION :

1) Pressure cook potatoes , mash them and keep aside .
2) Boil vermicilli with little water , drain the stock and allow it to cool .
3) Blend chillies , ginger garlic paste , salt and vermicilli .
4 ) Mix them with mashed potato add maida little by little. Stop using maida when u the dough is not sticky . Knead them and make small balls . Coat with bread crumps . You can either deep/shallow/tawa fry them . Serve hot with sauce .

VERMILCILLI POTATO CUTLET


INGREDIENTS :

Potato - 4 (big ) 
Ginger garlic paste - 2 tsp
Vermicilli - 1/2 cup 
Salt to taste
Green chillies - 4
Bread crumbs

METHOD OF PREPARATION :

1) Pressure cook potatoes , mash them and keep aside . 
2) Boil vermicilli with little water , drain the stock and allow it to cool .
 
3) Blend chillies , ginger garlic paste , salt and vermicilli .




4 ) Mix them with mashed potato. Knead them and make small balls . Flatten them, dust it with bread/ biscuit crumps and tawa dry them . 



Serve hot with sauce . Sending this to Asankhana Valentine's Day Special Event .
