MIXED VEGETABLE PARATHA


Hai friends , 

This is my 100th post . I am really surprised.....wow....i made it . I am grateful to my family for their support and my blogger friends . Your support , guidance and your most valuable comments helped me to achieve this . Thank you my dear friends .......for this achievement .

I want my 100 th post to be something special and different . So here comes my post for a good deed . Varsha and Viki have tagged me for this venture . Thank you girls for tagging me and you both made my day .......Feeling happy to participate in this venture . 


INGREDIENTS: 

  • Wheat flour - 2 cups 
  • Mixed vegetables - 1 cup 
  • Chilli powder - 2 tsp 
  • Turmeric powder - 1/2 tsp 
  • Salt to taste 


METHOD OF PREPARATION : 

1) Knead dough to make chapathi . 
2) Boil mixed vegetables till tender and soft. Slightly mash them with 2 tsp of chilli powder , turmeric powder and salt.


3) Meanwhile , roll out a slightly thick base large size chapathi. Stuff 1/2 tsp of the cooked vegetable. Seal the corners well and roll out again firmly.






4) Heat Dosa tawa. Once hot, place the rolled chapatti and spray ghee or oil. Flip to its sides till done.



Serve hot with kurma . This recipe goes to Breadline Africa Bake - Off .

EGG DUM CHAPATHI





INGREDIENTS :

Wheat flour - 2 cups
Salt to taste



FOR EGG STUFFING :

Egg 1 per chapatti
Garam masala - 1 tsp
Chilli powder - 2 tsps
Salt
Sliced onion - 1

METHOD OF PREPARATION :

1) Beat eggs well with spice powders, salt and onion .




2) Knead soft dough for chapathis .
3) Roll thin crest for chapathi .




4) Heat tawa . Once hot , spread a spoon of ghee . Place a thin crest .






5) Pour egg in the centre of the roti .



6)Again , spread the egg evenly and spray oil/ghee for the roti.
7) After 2 minutes , fold the corners of the roti to the centre to form a square/rectangle shape .




8) Flip to the sides . Cook till done . Cook only in medium flame to avoid burning . Egg will cooked in the dum itself.




9) Once done, remove from the flame. Serve hot.

BEETROOT PARATHA



INGREDIENTS :

Beetroot small - 4 
Green Chillies - 3
Cumin/Jeera powder - 1 tsp
Salt to taste

METHOD OF PREPARATION :

1) Boil beetroot in pressure cooker for 3 whistles till it softens well with little water.
2) Then , blend beetroot with chillies ,jeera powder and 1/4 salt for a minute.
3) Meanwhile , knead soft dough for roti / chapathi .Make a medium size ball of dough and roll over.
5) Spread beetroot masala stuff in the center . Place another rolled chapathi over it .Seal the edges.Thinly roll it over again.


6) Heat oil in tawa.  Place it , sprinkle a spoon of oil , flip to its side till done .
7) Serve hot with Dal /Kurma .

BRINJAL STUFFED PARATHA




INGREDIENTS :

Brinjal small - 4 - 5
Chilli powder - 1 tsp
Ginger garlic paste -  1 tsp
Turmeric powder - 1/2 tsp
Salt to taste
Garam masala -  1/2 tsp

METHOD OF PREPARATION :

1) Boil brinjal in pressure cooker for 4 whistles till it softens well with little water.
2) Then , saute brinjal with spice powders and salt for a minute.
3) Allow it to cool down.
4) Meanwhile , knead soft dough for roti / chapathi .Make a medium size ball of dough and roll over.

6) Heat oil in tawa.  Place it , sprinkle a spoon of oil , flip to its side till done .

GREEN PEAS KACHORI WITH DUM ALOO FOR SNC CHALLENGE



GREEN PEAS KACHORI:
INGREDIENTS :


For Filling:

Green Peas - 
4 Cups 
Green Chillies - 4 
Asafoetida - a pinch
Ginger paste - 
1 tsp 
Sugar - 
1 tsp 
Roasted Cumin seeds (powdered) - 
1 tsp 
Clarified Butter (ghee) - 
1 tbsp 
Salt to taste


For Kachoris:

Maida - 
3 Cups
Salt a pinch
Oil for deep fry


METHOD OF PREPARATION :

1) Grind green peas with 4 green chillies and little water  a bit coarse .

2) Meanwhile ,heat ghee in a pan and add asafoetida .


3) Add grinded peas to it and add 
ginger paste , roasted cumin powder, sugar and salt.

4) Stir it up till the excess water evaporates and the mixture gets dry .Remove it from the flame and allow it to cool down.
5) On the other hand ,knead maida, salt , water and oil to a soft dough.


6) 
Now make small balls from the dough and roll it like poori . Stuff the filling in the
middle of it , fold back and roll again to small poori .

7) Deep fry them till golden brown.



DUM ALOO :

INGREDIENTS :

Baby Potatoes - 
750 gm 
Asafoetida
Cumin seeds - 
1/2 tsp 
Fennel seeds - 
1/2 tsp 
1 Bay leaf/Biriyani leaf
 A Handful of Green Peas
Green Chillies - 
3-4 
Tomato -
1 large 
Turmeric powder - 
1/2 tsp 
Cumin powder -
1/2 tsp 
Ginger paste-
2 tsps 
Coriander powder - 
1 tsp 
Chilli powder-
1 tsp 
Sugar -
1/2 tsp 
Garam Masala - 1/2 tsp 
Coriander Leaves 
Yogurt - 3/4 cup

Oil
Salt to taste

METHOD OF PREPARATION :

1) 
Pressure cook potatoes, till it tendered (I cooked upto 3 whistles).

Peel potatoes and set aside.


Heat oil in a wok. Add potato, fry till it turn into golden. Drain oil, keep fried potatoes aside.


Temper with bay leaf, asafoetida, cumin seeds and fennel seeds in the same oil. Saute for 30-40 seconds.


Now add green peas in it. Fry for 2 minutes.


Add chopped tomato and green chillies in it. Mix well.


Put all dry spices, ginger paste and salt in it. Fold nicely for another 4-5 minutes till oil seperates from spices.


Add sugar and fried potatoes in it. Mix well for another 2-3 minutes on medium heat.


Add sour curd now. Fold for another 2 minutes, followed by adding 1/2 cup water in it.


Cook for another 4 minutes. 


Add coriander leaves and switch off the heat now.


Serve hot Green Peas Kachori with spicy luscious Dam Aloo.

GARLIC NAAN





INGREDIENTS :

Maida - 2 cups

Yogurt/Curd - 1/4 cup
Salt to taste

Garlic - 8 cloves (Boiled and grinded to paste)




Dried mint - 1 tsp for each naan
Milk - 1/2 cup
Butter

METHOD OF PREPARATION :

1) Knead a soft dough with the above ingredients and keep aside for 4-5 hrs except butter.
2) Make a big ball of it and roll it thick .
3) Heat tawa and apply water to one side of the naan .Place the wet side on the tawa.
4)Turn the tawa and cook naan directly on the flame , till brown spots appear .
5)Once done , place the tawa back to the stove and spread butter and mint.

Once done , Serve hot .

Self raiising flour - 2 cups
Salt to taste
Milk - 1/2 cup
Butter

METHOD OF PREPARATION :

1) Knead a soft dough with the above ingredients and keep aside for 3 hrs except butter.
2) Make a big ball of it and roll it thick .
3) Heat tawa and apply water to one side of the naan .Place the wet side on the tawa.
4)Turn the tawa and cook naan directly on the flame , till brown spots appear .
5)Once done , place the tawa back to the stove and add butter .

Once done , Serve hot .

OATS CHAPATHI





INGREDIENTS : 

Whole wheat flour  - 2 cups
Oats - 1 cup, finely powdered
Oil
Salt to taste






METHOD OF PREPARATION :

1) Knead dough with the wheat and oats flour firmly with oil . Roll small ball of dough for chaphathi .
2)Heat tawa. Once hot , place it and flip to its sides till done .

SPINACH CHAPATHI



INGREDIENTS : 

Whole wheat flour  - 2 cups
Spinach 1 bunch
Chilli powder - 2 tsps
Turmeric powder - 1 tsp
Garlic cloves - 4
Jeera - 1 tsp
Salt to taste
Ghee/Unsalted butter .

METHOD OF PREPARATION :

1) Blend spinach with garlic , chillipowder, jeera, turmeric powder and salt . 



2)Knead dough with the grinded spinach firmly with oil . Roll small ball of dough for chaphathi .





3)Heat tawa. Once hot , place it and flip to its sides till done .
