QUICK AND DELICIOUS COMBO - THAYIR SADAM AND VENDAIKKAI FRY (TEMPERED CURD RICE AND LADIES FINGER FRY) ENJOYING THE AWARD



CURD RICE :

INGREDIENTS :

Rice - 1 cup
Curd -- 1 cup
Milk -- 1/4 cup
Ginger -- a small piece
Green Chillies - 3
Curry leaves
Mustard -- 1 tsp
Urat dal -- 1 tsp
Salt to taste .

METHOD OF PREPARATION :

1) Cook rice with 3 cups of water .Once done , mix with curd well and keep aside.
2) Heat oil in a kadai . Add mustard ,urat dal , green chillies and curry leaves . Saute for 2 minutes.
3) Then add finely sliced , chopped ginger and saute for a minute .
4) Lower the flame . Then , add curd rice to it .
5) Finally , add milk to it and mix well . Add milk little by little.Keep in flame till it gets proper consistency .

Serve hot with veggie fry , pappad or pickle .

VENDAIKKAI FRY :

INGREDIENTS :

Ladies finger -- 150 gms
Chilli powder - 1 tsp
Turmeric powder - 1 tsp
Salt to taste
Channa dal flour/Besan flour - 2 tsps

METHOD OF PREPARATION :

1) Mix Chilli powder , Turmeric powder , Salt to taste in a dry bowl.
2) Spit ladies finger in the centre into 4 cuts .
3) Stuff it with the mix .
4) Heat a spoon of oil in a pan. Once hot , add the veggie .
5) After 2 minutes , sprinkle besan flour to it . This will not make veggies stick to pan and makes it crispy.

Once done , serve hot with Curd Rice.This goes to Cooking Basic Event hosted by Mahima.

PUNJABI CHOLE BATURA



Batura is one of most loved recipe, because of its softness and unique taste. 

BATURA :

Ingredients :

Maida / Plain flour -- 2 cups
Wheat flour -- 1 cup
Curd / Yogurt - 1 / 2 cup
Baking powder - 1 tsp
Salt
Sugar - 1 tsp

METHOD OF PREPARATION :


1) Mix the above said ingredients with little water , knead a soft dough and keep aside for 30 minutes .



2) Roll them out a bit thin and large size.


3) Deep fry them in oil till done.





PUNJABI CHOLE :



INGREDIENTS :

White channa / Kabuli channa -- 3 cups
Onion - 2 medium size
Biriyani leaves
Cinnamon sticks - 2
Cloves - 2
Garam masala powder - 1 tsp
Chilli powder - 2 tsps
Turmeric powder - 1 tsp
Salt to taste
Curry leaves
Elachi - 2
Mustard and Shah jeera - 1 tsp each
Green chillies- 2
Ginger-garlic paste - 1 tsp
Lemon juice -- 1 tsp

FOR GRINDING :

Cashew - 5 pieces
Fennel seeds - 1 tsp
Ripen Tomatoes -- 4
Fresh cream - 2 tsps
Red chillies- 2

METHOD OF PREPARATION :

1) Soak channa overnight . Pressure cook for 4 whistles , strain the stock and keep aside .
2) Heat oil in a kadai . Add Mustard and Shah jeera . Once it splutters , add green chillies and chopped onion . Saute till tender .
3) Then add ginger-garlic paste , cloves , biriyani leaves , elachi and cinnamon sticks . Saute it for a min . Add curry leaves .
4) Then add channa , all the powders and saute till the raw smell leaves .
5) Then add the grinded masala with little salt .
6) Add little water , cover with a lid and cook in slow flame till the oil separates .

Garnish with coriander leaves and lemon juice . Serve hot with roti's / paratha / poori .

HEART SHAPED GULAB JAMUN

I learnt this recipe from my bengali friend . Thank you dear for such a yummy delight .






INGREDIENTS :


Maida -- 1 cup
Sugar -- 3 cups
Milk - - 1 cup
Badam milk powder - 1 cup
Elachi powder - 1 tsp

Baking powder - 1/2 tsp

METHOD OF PREPARATION :

1) Boil the milk till it thickens .
2) Allow it to cool ,add baking powder and Sugar.
3) Add maida flour , elachi powder , badam mix and knead a soft dough with little water.Don't add water in a full stretch.
4) Make small balls out of it.Roll like chapathi and cut heart shapes from it.
5) Heat oil in a kadai . Deep fry them and keep aside .
6) Meanwhile make sugar syrup and allow it to cool.
7) Once it get cooled ,slowly drop fried hearts to the syrup and keep for 20 minutes .

VAZHAIPOO KULAMBU / BANANA FLOWER CURRY


INGREDIENTS :

Vazhaipoo -- 2 cups
Tamarind -- a medium lemon size
Methi Seeds-1 tsp
Red Chillies - 3
Rice flour - 1 tsp
Spicy sesame powder -- 2 tsps
Sambar powder --1 tsp
Turmeric powder --1 tsp
Onion--1 cup
Tomato -1
Salt to taste
Mustard,Jeera -- 1 tsp each
Curry leaves
Jaggery - a small piece

METHOD OF PREPARATION :

1) Clean the vazhaipoo and keep it in a bowl of water with a tsp of curd added .
2) Soak tamarind in the stock .
3) Meanwhile , heat oil in a kadai . Add mustard , methi seeds ,red chillies and Jeera .Once it splutters , add chopped onion and saute till tender .
4) Then add tomato,curry leaves and wait till it becomes skinny .
5) Then add vazhaipoo and saute well. Cover with a lid. Cook in a slow flame .
6) When it gets well cooked , add tamarind extract , little water and all the powders .
7) Add 2 tbsps of oil , dissolved rice flour, jaggery and cover with a lid .Remove from the flame ,once the oil separates .

The major campaign that hit the headlines and all the screens in India is 'SAVE OUR TIGERS . Tiger is our national animal . It is a sad fact to know that there are only 1411 tigers left . They are nearing extinction . It is our responsibility to save them . What are we going to do to save them ?. How are we going to protect them ? .We can go do a small help . We , the bloggers , can be a small part of this awareness campaign regarding this issue.We can spread this information all over the world .We can post this issue in our blog , try in all ways to communicate this major issue to everyone .Each and every small word regarding this will help the tigers .Let us all join hands to 'Save our Tigers .

FISH FRY WITH PIZZA SEASONING





INGREDIENTS : 

Fish -- 500 gms 
Chilli powder -- 6 tbsps 
Ginger-garlic paste - 1 tsp Turmeric powder - 1 tsp 
Fish masala -- 2 tsps Salt to tasteLemon juice -- 1 tbsp Coriander powder - 1 tsp Garam masala powder -- 1 tsp Chaat masala -- 1/2 tsp

For Garnishing : 

Oregano, Mixed herbs and Chilli flakes . 

METHOD OF PREPARATION : 

1) Mariante the wish with the all the ingredients for 1 hour . 
2) Then , fry them in a pan. 



3) Garnish with Oregano, Mixed and Chilli flakes. Give a quick toast before removing from the flame.

PUDINA RASAM


INGREDIENTS: 

Dal water--- 2 cup 
Turmeric powder--1/4 tsp 
Lemon juice--2 tbsp
Asafoetida--1/4 tsp 
Salt to taste 

FOR GRINDING : 

Pepper -1 tsp 
Cumin seeds -- 1 tsp 
Tomato - 1 
Garlic cloves-3 
Pudina leaves --- 2 handful 



METHOD OF PREPARATION :

1) Heat oil in a kadai . Add mustard , methi seeds . Once it splutters add red chillies, and curry leaves . 



2) Add grinded masala and mix them well. 


3) Then add dal water , mashed tomato juice , turmeric powder , salt , asafoetida and allow it to boil . 






4) Cover with a lid and allow it to boil . 

5) Once it starts boiling , add lemon juice . Serve hot with rice .

SESAME CHUTNEY VERSION 2



INGREDIENTS :

Sesame Seeds (White) -- 5 tbsps/(1/4) cup
Coconut -- 4 pieces
Channa dal -- 1 tsp
Mint leaves /Pudina -- 1 handful
Red Chillies/Green Chillies - 3
Salt to taste
Urat dal-- 1 tsp
Tamarind -- a small pinch
Curry leaves
Asafoetida-- a pinch

METHOD OF PREPARATION :

1) Heat a spoon of oil and roast all the ingredients one by one or altogether till the flavour smells out .

2) Grind them with little water and salt .Season it with Mustard Seeds,Urat dal and Red chillies.

Serve hot with Dosa/Idli/Tamarind Rice/Lemon Rice.

SPICY SESAME MASALA POWDER



INGREDIENTS :

Sesame Seeds (white)- 1 tsp
Red Chillies - 6 nos
Coriander Seeds - 1 tsp
Channa dal -- 1 tsp
Methi seeds - 1 tsp
Asafoetida -- 1/2 tsp

METHOD OF PREPARATION :

1) Dry roast all the ingredients one by one and powder them . Store in a airtight container.

We can use this powder for Tamarind Rice , Pulikulambu .
The above measurements will give powder for a week.This goes to Priya's Think Spice : Think Fenugreek seeds event initially started by Sunitha .

PANEER TAWA FRY /SPICY PANEER CUBES


INGREDIENTS : 

Paneer-- 200 gms 
Chilli powder - 1 tsp 
Turmeric powder - 1 tsp 
Garam masala powder - 1 tsp
Salt to taste 

METHOD OF PREPARATION : 

1) Chop Paneer in small cubes. Mix in the chilli powder, turmeric powder, Garam masala ans salt. Leave it aside for 10 minutes.


2) Heat oil in dosa pan or tawa, Spread little oil. One hot, spread the paneer cubes and fry till done.



 Serve hot as an evening snack .

KARA KULI PANIYARAM AND A HAPPY AWARD


INGREDIENTS :

Raw rice -- 1 cup
Fully boiled rice-- 1 cup
Methi seeds -- 1 tsp
Urat dal -- 1 handful
Salt to taste

FOR TEMPERING :
Mustard , jeera , urat dal -- 1 tsp each
Green chillies-- 3
Chopped curry leaves and coriander leaves.
Ginger--a small piece
and
Asafoetida.


METHOD OF PREPARATION :

1 ) Soak both rice and dal with methi seeds for 2 hours .
2) Grind them in a grinder till smooth batter.

3) Mix salt to it before making paniyaram .


4)
Meanwhile , season the batter with mustard , jeera , urat dal , green chillies , chopped curry leaves ,coriander leaves , chopped ginger and asafoetida.

5)
Heat kulipaniyaram pan . Apply oil to all the holes of the pan .

6)
Once hot , pour batter to the holes with a ladle .Cover the pan with a lid .
7) After 3 minutes , flip each paniyaram to the other side . Once done , serve hot with Coconut Chutney .

ARISI PARUPPU SADAM(KONGUNADU SPECIAL) / DAL RICE WITH CARROT STIR FRY



ARISI PARUPPU SADAM / DAL RICE :


INGREDIENTS :

Rice - -1 cup
Toor Dal -- 1/2 cup
Mustard , Jeera ,Channa dal-- 1 tsp each
Onion - 1
Red Chillies - -3
Curry leaves and Corinader leaves
Ginger garlic paste - 1/2 tsp
Salt to taste

METHOD OF PREPARATION :

1) Pressure cook dal and rice with 4 cups of water for 4 whistles . Add a spoon of oil and turmeric powder while cooking them.
2) Meanwhile , heat oil in a pan . Once hot , add mustard and jeera . When it splutters , add chillies and channa dal .

3) Once channa dal is roasted , add chopped onion and ginger-garlic paste and saute till tender .


4) Add curry leaves,salt and coriander leaves .


5) Finally,add this to the rice and mix well .


Serve hot with Raitha / any stir fried veggie .

RED CARROT STIR FRY :

INGREDIENTS:


Carrot- 250 g
Pearl Onions - 7-8
Mustard,Urad dal - 1/2 tsp each
Curry leaves
Moong dal- 1/4 tsp
Grated coconut -3 tbsp
Turmeric powder - 1/2 tsp
Red Chillies - 2 nos
Pepper powder -- 1 tsp
Salt to taste


METHOD OF PREPARATION:

1) Peal the skin of carrot and chop them.Meanwhile soak moong dal in water for 20 minutes.

2) Heat oil in a kadai . Once hot , add mustard and urad dal . When it splutters out , add curry leaves , red chillies and chopped onion.Fry till onion is becomes tender.Followed by moong dal.

3) Add chopped carrot and fry for a min . Then add little water and cover with a lid till it is cooked well . Leave in slow flame for 3-4 minutes.

4) Add pepper powder,salt and turmeric powder and mix well with the carrot.

5) Finally ,add grated coconut and fry till the coconut flavour rules out . Turn off the flame.

Serve hot with rice.
