CHEESE POTATOES

Potatoes are one of the vegetables that never disappointed parents whose children are fussy eaters. Any recipe with Potato will always be welcomed by all the children. Cheese potatoes are quick healthy snack for children. This can be prepared in minutes with minimum ingredients.




Servings : 4 people

INGREDIENTS : 

Potatoes - 250 gms
Jeera - 2 tsps
Turmeric powder- 1 tsp
Chilli powder- 2 tsps
Salt to taste
Bread crumbs
Cheese slices

METHOD OF PREPARATION:

1) Peal the skin and boil potatoes.
2) Mash it up well with turmeric powder, chilli powder, jeera and salt.
3) Roll balls of the mashed potatoes and coat it with bread crumbs.


4) Flatten it and place the cheese slices between two flattened Potato balls. Seal the corners well.




5) Heat butter in a frying pan. Once hot, place the potatoes and flip to its side, toast till golden brown.



6) Serve hot . It can be served as a burger too, whichever way your children prefers to have.

RICE PATTIES / CUTLETS


Hi ,

Today, I am sharing a healthy evening snack. When children or hubby is back home after coming from school and office, they will enter the kitchen to find their snacks for the evening. Especially during winters or in rainy days, we generally crave for hot and spicy food.

Rice patties is easy to cook in less than 20 minutes. Let's see, how to prepare the Rice Cutlets or Patties.




Cooking time : 20 minutes.
Preparation time : 10 minutes.

INGREDIENTS :

For Cutlet:

Cooked Rice : 1 cup
Sweet corn - 1 cup
Green pepper - 1
Cumin seeds - 1 tsp
Salt to taste

Butter and Cheese as required.
Bread crumps (I used fresh multi seeded bread)




COOKING PROCESS :

1) Take a large mixing bowl. Mix rice, sweet corn, finely chopped pepper, cumin seeds and salt.
2) Mash them well with a ladle or grind in mixer for 1 minutes. Grate some cheese over it (if preferred).
3) Roll balls of the mixture flatten it. Roll the cutler over crumps. 
4) Meanwhile, heat pan in the medium flame. Once hot, add 2-3 tbsps of butter and fry the cutlets, flip to its side and fry till golden brown. (You can shallow fry them as well.) Once golden brown, remove and Serve hot with sauce.

BEETROOT POTATO ROLLS




INGREDIENTS ;

Beetroot-2
Potato - 2
Green Chillies-3
Jeera - 1 tsp
Salt to taste
Ginger-garlic paste - 1/2 tsp
Garam masala - 1/2 tsp

METHOD OF PREPARATION ;

1. Boil the beetroot and potato till they soften.
2. mash them well with other ingredients .
3. Roll small portions of it ,coated with biscuit crumps.
4.Finally,deep fry the till golden brown .

Serve hot with sauce.

SAMBAR VADAI



A yummy truly Tamilian recipe to share with you all.....My hubby's most favourite starter , first placed order in any restaurant in Tamilnadu.

For Vadai :



INGREDIENTS:

Urat dal - 1 cup
Salt to taste
Jeera - 1 tsp
Green chillies - 2
Turmeric powder - 1/2 tsp
Onion - 1

METHOD OF PREPARATION :

1) Soak dal in water for 1 hour.Grind it without water , if watery add 2 tsps of rice or besan flour.
2) Add chopped onion and green chillies with less salt to the batter .Mix well and smear ur hands with oil,make small balls ,flatten and deep fry them.

For Sambar : 


INGREDIENTS:

Toor dhal - 1 cup
Pearl onion - 1/4 cup chopped
Tomato - 1 finely chopped

TO GRIND:

Tomato - 1
Roasted gram/Pottukadalai - 1 tbsp
Turmeric powder- 1/4 tsp
Coriander powder - 1 tsp
Grated coconut - 2 tsp

Tadka:

Mustard - 1/4 tsp
Methi seeds - 1/4 tsp
Cumin  - 1/2 tsp
Urat dal - 1 tsp
Onion - few chopped
Curry leaves - few
Green chillies - 2
Coriander leaves - 1 handful
Asafoetida- few tsp


METHOD OF PREPARATION:

  1. Pressure cook onions, tomatoes, dal with sufficient water .Cook for 6-7 whistles and then mash the dal well.
  2. Add the grind masala with little water to the dal .Add salt to it and mix it well.
  3. Heat oil in a pan, add mustard seed, methi seeds, cumin , urat dal .When it splutters, add the finely chopped onion , curry leaves and finally add this to the dal.Add asafoetida.
  4. Mix well and cook for 5 min. Garnish with coriander leaves and serve.

For Sambar Vadai :


Serve Vadai's soaked in Sambar with few Karaboondhi garnishing.

MALAI PANEER TIKKA


Tried this delicious tikka from arthy shama for potluck party 


Ingredients:

  1. Paneer- 200 gms
  2. Capsicum - 1 or 2
  3. Deseeded tomato quartered - 1/2 cup

For marination
  1. Curd-1 tbsp
  2. Fresh cream-2 tbsp
  3. Garam masala-1 tsp
  4. Chilly powder- 1 tsp 
  5. Coriander powder-1 tsp 
  6. Ginger-garlic paste -1 tsp 
  7. Salt to taste
  8. Dried methi leaves - 1 tsp 
  9. Turmeric powder- a pinch


Method of preparation :


1 .Mix all ingredients for marination well.
2.Toss paneer, capsicum and tomato over the masala .
3. Refrigerate for four to six hours.
4. Then pierce them one by one on wooden skewers .
5. Grill them at pre-heated oven at 240 degree celsius for twenty minutes.Check them in between and flip it till done.

Serve them hot .
