NUTS HALWA (Cashews, Almonds, Pista)


INGREDIENTS :

  • Cashew, Badam, Pista - ( dry roast them, powder it a bit coarsely) - 1 cup
  • Milk powder - 2 tbsps.
  • Cane sugar- 1 cup
  • Ghee 

METHOD OF PREPARATION : 

 1) Boil cane sugar with sufficient water, wait till the sugar is dissolved completely and thickens . 



2) Slowly add milk powder and blended nuts powder .Stir it continuously without any lumps . 



3) Stir it properly till it comes to proper consistency. Add a ladle of ghee. Mix it well, the halwa comes out without sticking to the pan.

MOONG DAL CHAPATHI


INGREDIENTS : 

Wheat flour -- 1 cup 
Salt to taste 
Moong dal -- 1 cup 
Jeera-- -3 tsps
Kasturi methi- 2 tsps
Oil as required.



METHOD OF PREPARATION : 

 1) Pressure cook dal with a spoon of oil and turmeric powder for 2 whistles.When the pressure is released , mix jeera and Kasturi methi to it with little salt. 

2) Mix it the wheat flour and knead a soft dough.



3) Roll the dough. Heat oil or butter in a dosa pan. Once hot, place the rolled chapathi , flip to its side till done.

ALOO PARATHA



INGREDIENTS :
 

Wheat flour - 2 cups

For stuffing:

Potatoes/Aloo -- 6
Turmeric powder -- 1 tsp
Onion - 1 finely diced
Green chillies- 5 finely chopped
 Salt to taste 

METHOD OF PREPARATION :

1) Make soft dough of wheat flour . 
2) Peel the skin , and pressure cook potato for 5 whistles . 
3) Then mash potato, add in onion, chillies, turmeric powder, jeera, salt. 


4) Roll small balls of dough into chapathi and stuff it with aloo . Roll again and then tawa fry them. Flip to its side till done.




Serve hot with kurma .

PEAS PULAO



INGREDIENTS :

Peas -- 1 cup
Rice -- 1 cup
Cinnamon stick -- 3
Kasturi Methi- 1 tsp
Cloves -- 2
Biriyani leaves -- 2
Green chillies -- 2 split
Jeera -- 2 tsps
Salt to taste
Onion -- 1
Ginger - -garlic paste -- 1 tsp

METHOD OF PREPARATION :

1) Heat ghee in a cooker . Add Jeera , Cloves , Cinnamon , Onion , Biriyani leaves . Saute till onion becomes tender .



2) Then add peas , kasturi methi, salt and rice with 1 1/2 cup of water for 3 whistles .





Serve hot with kurma .

CAULIFLOWER MANCHURIAN



INGREDIENTS :

Cauliflower - 1 medium size 
Spring onion - 5
Onion - 1 big
Garlic cloves -6
Ginger - 1 small piece
Red bell pepper - 1/2 cup chopped
Soy sauce - 1 tsp
Chilli Sauce - 1 tsp
Corn flour - 1/2 tsp
Plain flour - 1/2 tsp
Olive oil
Salt to taste

METHOD OF PREPARATION:

1. Wash the florets in hot water with turmeric powder and Salt. Then add Corn flour, plain flour and Salt to it. Mix it well.



2. Deep fry them till golden brown and keep is aside once done.





3. Heat olive oil in a pan. Add in the chopped ginger, garlic, spring onion for 2 minutes.


4. Add in the finely chopped onion and salt. Saute till tender. Then, add in cauliflower and mix it well. Add in Soy chilli sauce. Toss well for few minutes and then remove from the flame.


Serve hot.

BADAM PURI




I learnt this recipe from my marathi friend .

INGREDIENTS:

Badam powder -- 1 1/2 cup
Maida --- 1 cup
Wheat flour-- 1 cup
Milk -- as per requirement
Sugar - 3 cup

METHOD OF PREPARATION :

1) Make sugar syrup and keep aside .
2) Make soft dough with other ingredients .
3)Make small balls of the dough and roll it to puri 's .
4) Apply a spoon of ghee over each puri .
5) Stack 3 puri's and roll it . Then cut into small pieces and deep fry them till golden brown .
6) Then leave them in sugar syrup for 1 hour .

Serve with puri with sugar syrup .
