SPINACH NOODLES




INGREDIENTS :

Noodles - 1 packet
Noodle masala - 1 packet
Spinach - 1/2 bunch

METHOD OF PREPARATION :

1) Cook noodles with sufficient water and a spoon of oil with noodles masala till done.
2) Meanwhile , cook spinach with little water till done and grind it .
3) Remove both from the flame and mix together well before serving .

CHICKEN FRY







INGREDIENTS :

Chicken legs - 8
Chilli powder -  2 tsps
Lemon - 1
Curd - 1 tsp
Turmeric powder - 1 tsp
Chicken masala - 2 tsps
Salt to taste
Dried mint - 1 tsp
Coriander powder -  1 tsp




METHOD OF PREPARATION : 

1) Marinate the chicken with the above ingredients and leave in fridge for 1 hour.
2) Shallow fry them with little oil .

Serve hot .

VEGETABLE NOODLE SOUP




INGREDIENTS :

Noodles - 1 small packet
Onion - 1 chopped
Mixed veggies - 1 cup
Salt to taste
Pepper - Jeera powder - 1 tsp
Turmeric powder- 1 pinch
Chilli powder - 1 tsp
Milk - 1 tsp
Corn flour - 2 tsps


METHOD OF PREPARATION :

1) Heat oil . Add mustard and Jeera . When it splutters add , chopped onion and saute till tender.
2) Add veggies with spice powders, salt and water.
3) Cook till done .
4) Meanwhile in a separate pan, add sufficient water , when it starts boiling add noodles and cook till done .Remove it and keep aside.
5) Add water to the veggie pan and corn flour to it.Stir it without lumps.When it starts boiling add noodles to it and serve hot .

OATS PORRIDGE / KANJI



INGREDIENTS :

Oats - 1/4 cup
Chillies - 2
Onion - 1 chopped
Carrot - 1 grated
Salt to taste

METHOD OF PREPARATION :

1) Boil oats well with sufficient water and salt.
2) Garnish it with Raw chiilies, onion and carrot .

Serve hot .

Mixed veggies - 1 cup
Salt to taste
Mustard , Jeera - 1 tsp each
Maggie masala -2 packets
Chilli powder - 1 tsp


METHOD OF PREPARATION :

1) Heat oil . Add mustard and Jeera . When it splutters add , chopped onion and saute till tender.
2) Add veggies with spice powders, salt and water.
3) Cook till done .
4) Then , add sufficient water , when it starts boiling add noodles and cook till done .Check for salt and spice.

MY FIRST BAKE - HONEY CAKE


INGREDIENTS :

Self Raising Flour - 1 cup
Eggs - 3
Caster Sugar - 1 cup
Honey - 1/4 cup
Butter - 1/2 cup
Baking powder - 1 tsp
Milk - 1/4 cup

METHOD OF PREPARATION :

1) Seive the flour well . 
2) Beat the eggs well .
3) Mix flour , eggs , milk ,sugar,baking powder and butter with honey well without lumps .
4) Transfer the mix to a greased pan .
5) Heat the oven to 200 deg .c . Place the pan and bake for 20 minutes . Prick it with a tooth stick and check before removing it from the oven .
6) Once done ,  place it in a grill to cool down.
7) Serve it with Honey Toppings .

CHICKEN CHOW MEIN




INGREDIENTS :

Noodles  - 1 packet
Green chillies  - 3
Onion  - 1 small sliced
Soy sauce  -  2 tsps
Chicken pieces - few
Garlic cloves- 3
Tomato sauce - 1 tsp

METHOD OF PREPARATION :

1) Cook noodles and drain the water . Toss it up with oil to avoind sticking .
2) Meanwhile , marinate chicken pieces with salt, chilli powder and pepper powder for 1/2 hr . Then , fry it separately in little oil till done . Keep is aside .
3) Then , saute onion, garlic cloves , green chillies till tender .
4) Then , add chicken to it followed by noodles and mix it up well . 
5) Finally , toss it up with sauces and little salt .

Serve hot .

POTATO PODIMAS ( URULAIKILANGHU PODIMAS)




INGREDIENTS:



  • Potato - 200 g
  • Green chillies - 2
  • Jeera  1 tsp
  • Curry leaves
  • Mustard - 1 tsp
  • Grated Coconut - 3 tbsps
  • Salt to taste
  • Pepper Jeera powder - 2 tsps
  • Onion - 1 big sliced
  • Turmeric powder - 1 tsp

METHOD OF PREPARATION:

1) Peel the skin and grate them finely.




2)Heat oil in a kadai .Add mustard and jeera .When it splutters , add onion, green chillies and curry leaves.


3)Then add grated coconut and fry for a minute .


4)Add potato and mix them well .


5) Add pepper jeera powder, turmeric powder and mix them well with little salt before removing from flame.

Serve hot with rice.

PALAK PARATHA





INGREDIENTS : 

Whole wheat flour  - 2 cups
Spinach 1 bunch
Red chillies - 3
Garlic cloves - 4
Salt to taste
Ghee/Unsalted butter .


METHOD OF PREPARATION :

1) Cook spinach with garlic , red chillies with little oil . Allow it to cool down and grind it coarsely.
2) Knead dough with the grinded spinach firmly with oil . Roll small ball of dough for chaphathi .
3)Heat tawa. Once hot , place it and flip to its sides till done .

TOOR DAL OMELETTE

This is one of my recipe from my earlier post in 2008 , wish to share with you again.



INGREDIENTS::

Toor dal-1 cup
Rice - 1/4 cup
Red chillies - 10
Fennel Seeds - 1 tsp
Sambar onion - 10
Curry and Coriander leaves
Salt to taste

METHOD OF PREPARATION :

1) Soak dal and rice for 4-5 hrs . 
2) Grind it finely with other ingredients like a dosa batter , a bit watery.
3) Heat dosa tawa . Spread a ladle of batter and flip to its side till done .

Serve hot with Sambar/Chutney

PRAWN BIRIYANI / ERAL BIRIYANI



INGREDIENTS:

Prawn - 300 g
Basmati Rice - 1 cup
Coriander leaves
Biriyani leaves -3
Mint leaves - handful
Salt to taste
Onion - 2 medium sliced
Tomato - 2 big sliced
Cinnamon - 3
Cloves - 3
Coconut milk- 1 glass

To marinate prawn : 

Chilli powder - 1 1/2 tsp
Turmeric powder - 1 tsp 
Ginger-garlic paste - 1 tsp
Curd - 1/2 tsp
Salt

To Grind : 

Fennel seeds - 1 tsp
Green chillies - 4 
Coriander seeds - 1 tsp
Jeera - 1 tsp
Ginger - a small piece
Garlic cloves - 7-8




METHOD OF PREPARATION : 

1) Marinate prawn with little of chilli powder , ginger garlic, salt,turmeric powder and curd for 30 minutes. Alongside, clean and soak basmati rice in water for 15 minutes.

2) Divide the basic ingredients, we prepare rice and prawn separately and them bring together and leave in dhum.

3) Heat oil or ghee in pressure cooker . Once hot add whole spices, biriyani leaves for 2 minutes , followed by 1 sliced onion and saute till roasted or brown.



4) Then add 1 sliced tomato . Saute it till tender . Then add the grinded masala, homemade biriyani masala, chilli powder and saute till the raw smell leaves.

5) Add 1 full glass of coconut milk. Bring it to boil. Once, it starts boiling, add rice ,coriander and mint leaves. Cover with the lid. Cook for 1 whistle till the rice is little soft.

6) Meanwhile, heat oil in a separate kadai. Once hot, sauce 1 sliced onion and tomato till tender.Add marinated prawn , chilli powder and cook till prawn is half cooked. 



7) Release the steam of the pressure cooker and now mix the cooked prawn masala to it.
8) Cover with the lid and leave it in slow flame for dhum  Cook for 5-10 minutes till done.

Serve hot with Onion Raitha and Pudina Chutney .

RICE UPMA



INGREDIENTS :

Rice - 1/2 cup soaked and finely grinded with little water.
Onion -  1 chopped
Red Chillies - 2
Curry leaves
Jeera - 1 tsp
Mustard - 1 tsp
Salt to taste
Coriander leaves

METHOD OF PREPARATION : 

1) Heat oil in a kadai .Once hot , add Jeera and Mustard . When it splutters, add onion and saute till tender.
2) Then , add grinded rice to it with salt and stir it up continuously till done . The upma should not stick to the pan.Add oil if needed .
3) Garnish with Coriander leaves .

MADURAI PAROTTA




INGREDIENTS : 

Maida - 2 cups
Eggs - 3
Sugar - 1/2 cup
Milk- 1/2 cup
Butter as required
Oil 
Salt to taste


METHOD OF PREPARATION :

1) Mix plain flour with 3 eggs, 1/2 cup of sugar, salt. 



2) Add butter and mix it with the flour.



3) Knead it well with 1 cup of milk to a soft dough. 


 
4) Cover with a cling film, leave it aside for 6-7 hours. You have to knead the dough in  the morning for making parotta for dinner . 



5) Apply oil to your hand, roll small balls of the dough and roll as thin as you can.


4) Fold it from the sides like a spiral pattern.





5) Spray a spoon of oil over it and flatten it with
your palms and roll out lightly.


6) Heat tawa . Once hot , place it and add a spoon of oil .Then flip to its side till done .




Serve with Salna or Vegetable kurma.
