SPINACH CARROT SALAD

 


Salads are easy to prepare with the readily available vegetables at home. My Children are fond of salads, we prepared this Salad for Salad Sandwich with Mayonnaise.

Spinach, Carrot cut using spiralizer, Sweet corn, Red Bell Pepper, Lettuce and Cabbage. 

1) Steam the vegetables for 10 minutes.

2) Squeeze lemon and sprinkle salt and crused pepper. Mix it well.

Serve fresh and warm.

CARROT KOSAMBARI




INGREDIENTS :

Moong daal - 2 tsps
Grated carrots - 1 cup
Green chillies (slit) - 3
Salt to taste
Lemon juice -  2 tsps
Shredded coconut - 2 tbsps

For Tadka :
Mustard seeds - 1 tsp
Asafoetida 
Curry leaves
Sambar Onion - 3 

METHOD OF PREPARATION: 

1. Wash the moong daal and soak it in water for about 1-2 hours.Then,drain the water completely.
2.Add the grated carrot,green chillies, lemon juice, coconut, salt .Mix them well.
3.Now season it with tadka ingredients. Mix it again.

Serves good with rasam/sambar rice

Chickpeas Salad




INGREDIENTS :

Boiled chickpeas - 1 cup
Cucumber - 1 cubed
Tomato - 1 cubed
Onion - 1 sliced
Salt to taste
Lemon juice  - 1 tsp

METHOD OF PREPARATION :

Mix the above said ingredients in a bowl well . Leave for a minute and serve .

BLACK EYED PEAS SALAD



A yummy salad tried from Jagruti bhabhi .

INGREDIENTS :


Black eyed peas - 1/2 cup (soaked in water overnight)
Sliced tomatoes - few pieces
Green Chillies - 2 finely chopped
Cubed cucumber - 1 medium size
Lemon juice - 1 tsp
Sliced onion - 2 tbsps
Chilli powder -1/2 tsp
Chaat powder - 1/2 tsp
Pepper powder - 1/2 tsp
Coriander leaves - few 
Salt to taste

METHOD OF PREPARATION :

1) Pressure cook peas for 5 whistles or less with salt and strain the water .
2) Take a bowl and mix all the above said ingredients . Give a quick shake to the bowl/or mix them well with a spoon .
3) Salad is ready to be served.

CHICKPEAS SALAD



A simple and quick healthy salad for Vegan Thursday . 

INGREDIENTS :

Chickpeas - 1/2 cup (soaked in water overnight)
Grated Carrot - few tbsps/tsps
Green Chillies - 3 finely chopped
Cubed cucumber - 1 medium size
Lemon juice - 1 tsp
Grounded pepper - 1 tsp
Salt to taste

METHOD OF PREPARATION :

1) Pressure cook chickpeas for 5 whistles or less with salt and strain the water .
2) Take a bowl and mix all the above said ingredients . Give a quick shake to the bowl/or mix them well with a spoon .
3) Salad is ready to be served.

CREAMY POTATO SALAD/DIP



INGREDIENTS :

Potato - 150 gms
Full cream - 1 cup
Dried mint leaves
Salt 
Oregano toppings

METHOD OF PREPARATION :

1) Peel the skin and cube potatoes . Boil them till soft with little salt . Allow it to cool.
2) Warm the cream for 2 minutes.Whisk it well and mix with cooled potatoes .
3) Garnish with dried mint and oregano .

Serve chilled .

INGREDIENTS :

Sliced Apple , Pear , Banana - 1 bowl
Honey

METHOD OF PREPARATION :




Mix honey with fruits .

FRIED BRINJAL SALAD



INGREDIENTS :


Eggplant / Big Brinjal  - 1
Chilli powder - 2 tsps
Salt to taste
Turmeric powder - 1 tsp
Jeera powder - 1 tsp
Green pepper - 1 
Onion - 1 chopped
Coriander leaves


METHOD OF PREPARATION : 


1) Slice brinjal and mix it with Chillli powder,Turmeric powder , Salt , Jeera powder . Keep it aside for 15 minutes .
2) Toast it on dosa tawa with oil .
3) Once it gets roasted , transfer it to a bowl .
4) With the same oil , saute green pepper and onion .
5) Garnish fried brinjal with sauted pepper , onion and coriander leaves . 


Serve it with Oregano / Italian /Chaat seasoning.linking it up with Street Party Food event.

POHA CHAAT / SALAD


INGREDIENTS :


Poha - 1 cup

Onion - 1 chopped

Tomato - 1 chopped

Coriander leaves

Lemon juice

 Peanuts - 2 tbsps(optional)

Salt to taste


METHOD OF PREPARATION :


1) Wash poha and transfer it to a bowl. Sprinkle little water over it and keep aside for 15 minutes. It will become soft.

2) Mix chopped onion , tomato and lemon juice . Sprinkle little chaat masala and few roasted peanuts(optional)

3) Garnish it with Coriander leaves.

HORSE GRAM SALAD



INGREDIENTS :


Boiled roasted horse gram - 1 cup

Chopped onion - 1

Salad Tomato - 2

Coriander leaves

Lemon juice.


METHOD OF PREPARATION :


1) Mix the above ingredients in a bowl . 

2) Garnish with coriander leaves.

FRUITS LUNCH / SALAD


INGREDIENTS :

  • Banana - 1 big
  • Strawberries - 200 gms
  • Grapes - 200 gms
  • Lemon juice - 1 lemon
  • Lemon zest - 1 tsp
  • Honey - 2 tsps

METHOD OF PREPARATION :

1) Peel the skin of Banana. Slice them finely.



2) Add the sliced grapes finely (if seeded, remove the seeds).


3) Add in the sliced strawberries together.


4) Squeeze lemon juice and mix in the lemon zest.


5) Add the lemon juice with zest to the fruits bowl and mix in the honey. Slowly mix it up with a spoon.



A simple and yummy fruit salad is ready to be served . Mix fruits of your choice . My children loves it and we normally take this lunch during fasting . Linking it up with Fruit of the month - Grapes in my blog.

GREEN GRAM SPROUTS SALAD

Here is the recipe,



















Ingredients:

Sprouted Moong dal- 1 cup
Carrot-3(grated)
Onion-2(big),finely chopped
Coriander leaves-1/2 cup,finely chopped
Salt to taste
Lemon juice-1 tsp

Note:

Soak moong dal in water for 7-8 hours.Drain the water and tie the dal in a clean damp cloth for a night.Even you can use sprout maker.

Method:

1) Pressure cook sprouted dal for 1-2 whistles with little salt.

2) Mix sprouted dal,onion,carrot,coriander leaves in a big bowl.

3) Sprinkle lemon juice over the mixture if u prefer.Salad is ready.
