KARA VADAI


INGREDIENTS :

Urad dal - 1 cup
Boiled rice - 2 tbps
Jeera - 2 tsps
Chilli powder - 3 tsps
Turmeric powder - 1 tsp
Dried curry leaves
Salt to taste

METHOD OF PREPARATION :

1) Soak urad dal and rice for 4 hours. Grind them finely with little salt. Mix in the spices well in the batter. The Batter should not be watery.


2) Heat oil for deep frying. Drop a ladle of batter in the oil and fry them till done, golden colour.



Serve hot with Chutney.

BAKED PARUPPU VADAI


INGREDIENTS :

Channa dal/ Kadalai Paruppu - 1/2 cup
Onion - 1 cup finely chopped
Jeera - 2 tsp
Green chillies - 10 finely chopped
Curry leaves - few chopped
Salt to taste



METHOD OF PREPARATION :

1. Soak dal for 2 hours. Grind it coarsely with very little water.
2. Mix in jeera, onion, green chillies, curry leaves and salt.
3. Apply oil in evenly in the bun tray.



4. Roll small balls of the batter and flatten it, fill in  the tray.


5. Heat oven to 200 deg centigrade, preheat for 5 minutes, then place the tray in the oven and bake for 20 minutes till crispy.


6. Flip to its side, once in the middle.



7. Serve hot with chutney.

VAZHAIKKAI BAJJI


INGREDIENTS :

  • Vazhaikkai / Raw Banana - 1 big
  • Besan/Gram flour -  1/2 cup or as required.
  • Baking soda - 1/4 tsp
  • Chilli powder - 3 tbsps
  • Hing - a pinch
  • Salt to taste



METHOD OF PREPARATION: 

1) Peel the skin of raw banana and make thin slices. Make a slightly thick batter with besan, chilli powder, hing, baking soda, salt and water without any lumps.






2) Add the banana slices to it and dip it well, it gets coated well.

3) Heat oil for deep frying and then deep fry them till golden brown.





Serve hot with Chutney.

GARLIC BUTTER SPICE POPCORN



INGREDIENTS :

Corn kernels - 1 cup
Olive oil - 2 tbsps
Garlic butter - 50 gms
Salt to taste
Chilli powder - to taste



METHOD OF PREPARATION :

1) Heat butter in a heavy bottomed pot. Once it gets melted, add olive oil to it.



2) Take 1 cup of corn kernels and add it to the pan.



3) Spread it well in oil and butter.


4. Cover with a lid.

5. It will start to pop out. Wait till all the corns are popped out.


6. Remove from the flame and transfer it to a bowl.


7. Sprinkle salt and chilli powder and mix it well. Serve hot.

VEGETABLE MOMOS








INGREDIENTS: 

Mixed Vegetables - 1 cup (Cauliflower , Carrot , Sweet Corn , Potato ,Spinach,Capsicum)
Tomato chilli sauce - 1 tsp
Salt to taste
Plain flour - 1 cup
Olive Oil
Soy sauce - 1/2 tsp


METHOD OF PREPARATION :

1) Knead a soft dough with water, salt.



2) Once done, heat oil in a pan . Saute capsicum for 2 minutes and add the vegetables.
3) Sprinkle little water and cover with a lid . Cook till the vegetables gets soften .
4) Add sauces and salt and mix it well ,till the water is completely drained out.
5) Roll a small ball of flour . Place a small ball of veggie in the centre and fold its corners to the centre.



6) Steam cook the momos in idli pan / steamer till done.




Serve hot with Spice dips.

MASALA PEANUTS



INGREDIENTS : 

Peanuts -  1 cup
Besan flour - 1 cup
Chilli powder - 2 tsps
Turmeric powder-1/2 tsp
Kasturi methi - 1 tsp
Salt to taste
Asafoetida - 1/2 tsp

METHOD OF PREPARATION :

1) Mix the above ingredients with little water .


2) Heat oil in a kadai and deep fry them till crispy .

HONEYED FRUIT SANDWICH

A very simple yummy sandwich for kids . My daughter's favourite sandwich with her loved fruits .


 INGREDIENTS:

Bread slices
Fruit slices - Grapes, Banana, Apple
Honey as required

METHOD OF PREPARATION :  


1) Toast bread in a toaster.


2) Place mixed fruits and spread some honey over it.


Fruit sandwich is ready . 

Linking it with Fruit of the month - Grapes event in my space .

CHEESE SALAD SANDWICH


INGREDIENTS : 

Bread 

For Salad : 

Mix sliced cabbage , tomato, carrot, spinach, corn and 2 tbsps of lemon juice .


METHOD  OF PREPARATION : 


1) Toast bread . Apply cheese spread/ Mayonnaise to one side of each bread .



2) Sandwich salad between the bread .


Quick comfort breakfast to go with .

FRIED EGG NOODLES


INGREDIENTS :
  • Eggs - 6
  • Peas - 150 gms
  • Sweetcorn- 150 gms
  • Red Capsicum - 1
  • Noodles - 300 gms
  • Spring onion - 1 bunch( finely Chopped)
  • Sweet and Sour chilli sauce - 2 tsps
  • Pepper powder - 2 tsps
  • Jeera powder - 1 tsp
  • Dark soy sauce - 1 tsp
  • Olive Oil/Butter
  • Garlic cloves - 4
  • Salt to taste

METHOD OF PREPARATION :

1) Heat oil in a wide pan. Once hot, add in garlic cloves and saute till the aroma rules out. Meanwhile, boil noodles and drain the water. Keep it aside.



2) Add chopped Capsicum.  Saute it for few minutes.



3) Add in peas, sweet corn, carrot. Sprinkle little water and saute for few minutes till cooked.


4) Once cooked, add in dark soy sauce, chilli sauce, jeera powder and mix it well. 


5) Once done, mix in eggs with salt and mix it well, scramble it well.



6) Finally, mix in the cooked Noodles.  


Garnish it with crushed pepper or pepper powder.

Remove from the flame and serve hot.
