INGREDIENTS :
Basmati Rice - 1 cup
Carrot - 150 gms
Cloves -2
Cinnamon sticks - 2
Bay/ Brinji leaves- 2
Annasi -2
Coconut milk - 1/4 cup
Green Chillies -3
Sambar powder / Chilli powder- 1 tsp
Turmeric powder - 1 tsp
Cashews - few(optional)
Salt to taste
Olive oil- 4 tbsps
METHOD OF PREPARATION :
1) Clean and soak rice in water for 15 minutes.
2) Heat oil in a pressure cooker . Once hot , add cinnamon sticks , cloves , annasi, bay leaves. Once the flavour rules out ,add sliced onions and saute till tender .

I too make carrot rice, but I make it like lemon rice. Your recipe with coconut looks a little different!
