KOVAIKKAI (IVY GOURD) KULAMBU/ CURRY



INGREDIENTS:

Kovaikkai -- 150 gms
Onion -- 2 medium
Tomato ---2 big
Red chillies ---2
Mustard and Jeera ---1 tsp each
Curry leaves and Coriander leaves
Salt to taste
Chilli powder --- 2 tsp
Turmeric powder --1 tsp
Sugar -- 1 tsp

METHOD OF PREPARATION :

1) Heat oil in a pan . Add mustard , jeera and red chillies . When it splutters , add chopped onion and tomato and blend them well .

2) Add curry leaves and chopped kovaikkai .Mix it well and add little water wait till veggie becomes tender .

3) Once done , add sufficient water for curry and all the other ingredients .

4) Cover with a lid and cook till the oil separates .Garnish with coriander leaves .

Serve with hot steamed rice .

Never used kovakkai in kozhambu only in dry curries, neat idea looks inviting !

lovely idea... the recipe is very unique in the sense not too many spices and no tamarind..
This is a very healthy alternative! U have been really creative. I think it is the best way to use up my kovakka sitting in the fridge! thnx!
