KOVAIKKAI PORIYAL/ IVY GOURD FRY
Kovaikkai - 1/2 kg
Sambar onions - 10
Red chillies - 10
Salt to taste
Mustard ,Jeera,Urat dal - 1/2 tsp
Chilli powder - 1/2 tsp
TO GRIND : Onion + Red chillies - dont add water,grind coarsely.
NOTE : After chopping kovaikkai , add a tsp of turmeric powder and salt and mix them well and leave for 10 - 15 minutes.
METHOD OF PREPARATION :
1) Heat oil in a kadai.Add mustard,jeera and urat dal.When it splutters,add chopped kovaikkai (either round shape or finger shape) and fry them for a minute.Cover with a lid.Wait till it is half cooked.
2) Then add the grinded masala and chilli powder with salt.
3) Mix them well and leave in slow flame till it becomes proper fry.
