KADALAI MAAVU SAMBAR/BESAN FLOUR SAMBAR


INGREDIENTS :

Channa dal flour/ Besan flour / Kadalai maavu --- 1 ladle
Tomato -- 1
Onion --- 1
Green chillies --- 2
Chilli powder --- 1 tsp
Turmeric powder -- 1 tsp
Salt to taste
Curry and coriander leaves .
Mustard and Jeera --- 1 tsp each

METHOD OF PREPARATION :

1) Heat oil in a pan . Once hot,add mustard and jeera .When it splutters , add chopped onion , tomato , green chillies and curry leaves .

2) Meanwhile , mix a ladle of flour with sufficient water without any lumps . It must be watery not very thick .

3) When onion mixture is ready,add the flour to it and add all the powders. Cook in slow flame . Wait till the raw smell of flour leaves and garnish with coriander leaves .

Serve hot with Dosa / Idli.......You can find this sambar in all the small idli shops in Madurai .

I wud say this is a perfect Idli dosa accompaniment.We call this "Dhidir sambhar".Am easy and delicious one:)
First time I'm hearing of a sambar with besan. That's neat. NO need to cook dal. Nice one shama.

I call it bombai chutney too! Generally taken along with Puris.. been years since I've tried this! looks good..

HOMEMADE MUTTON MASALA POWDER

INGREDIENTS :

Red Chillies - 25 gms
Coriander seeds - 15 gms
Cumin seeds - 10 gms
Black Pepper- 10 gms
Biriyani Leaf- 3
Cloves - 10 gms
Dried and fried Garlic cloves - 10 nos
Cinnamon sticks - few
Staranise - few
Dried Mint - 5 tsps
Kasthuri Methi - few 
Mustard - 1 tsp
Fennel seeds - 5 gms
Kuskus - 1 tsp
Salt

METHOD OF PREPARATION :

1) Dry fry them one by one and grind them to a fine powder with sufficient salt.
2) Store them in an air tight container.
